Grab a box and use it to whip up a batch of one of my favorite cookies…Snowball Cookies. These are a must have during the holidays. They are super easy and don’t require a ton of ingredients.
- 1 cup butter, softened
- 1/4 cup granulated sugar
- 1 teaspoon vanilla extract
- 2 cups GOOD MEASURES™ all-purpose flour
- 2 cups pecans or walnuts, finely chopped
- about 1 cup powdered sugar
- Preheat oven to 325°F.
- Cream butter and sugar in medium bowl.
- Add the vanilla and beat until creamy.
- Add the flour and nuts then beat at low speed until well mixed, scraping bowl as needed.
- Roll dough into 1-inch balls.
- Place on a parchment lined cookie sheet and bake approximately 15 – 18 minutes, until lightly browned.
- Allow the cookies to cook for a few minutes then roll in powdered sugar while still warm.
- If desired, you can roll again once completely cooled.
I made these cookies. They were scrumptious. I made them round but they flattened out while cooking. Then when I went to roll them in the powdered sugar after cooked they all broke up into crumbs. I don’t know what I did wrong. So, what I did was I put all the crumbs into a container with a cover and spooned it out of the container and sprinkled it onto ice cream to eat it. It was fabulous.
