Many of those recipes are for things that I like and others I make because my guys enjoy them. My Sweet Onion Risotto with Bacon is one of my absolute favorite things E.V.E.R! It’s rich, creamy and packed with so much amazing flavor. I am not going to lie, I could wipe out that entire pan of rice that you see below in one sitting all by myself. Now, I might have to roll out of my chair but it would totally be worth it…it is really that good!
I’ll go ahead and tell you that while the recipe is super simple to make, it does require some effort. Nothing difficult…but if you have even made risotto before, you know that lots of patience and stirring is required for the magic to occur.
With only a few ingredients and little effort you end up with a dish that is way beyond regular rice. It’s fancy enough to serve at a dinner party or as a special date night dinner. But, please don’t deprive your tastebuds and wait for a special occasion! This dish is perfect any time AND any day of the week.

- 1 tablespoon butter
- 1 tablespoon olive oil
- 1 large sweet onion, chopped
- 2 cloves garlic, finely chopped
- 1 cup RiceSelect® Arborio Rice
- 1/2 cup white wine
- 3 cups chicken stock
- 1/3 cup grated parmesan cheese
- 1/4 cup feta cheese
- 2 slices bacon, cooked crisp & crumbled
- Salt & freshly cracked black pepper
- Parsley or chives for garnish
- Heat the butter and olive oil in a large skillet over medium heat.
- Add the onion and cook for 4 – 6 minutes until translucent.
- Add the garlic and cook another minute, until fragrant.
- Pour the RiceSelect® Arborio Rice into the pan and cook for 3 – 4 minutes to toast the rice. The rice will become translucent around the edges and a very slight golden color.
- Add the wine, stirring constantly until absorbed, about 1 minute.
- Add 1/2 cup of chicken broth and allow to simmer, stirring often until absorbed.
- Continue adding the broth, 1/2 cup at a time until absorbed and the rice is tender but slightly al dente.
- Remove from heat and stir in the parmesan cheese, feta cheese and crumbled bacon.
- Taste and season with salt and pepper as desired.
- Garnish with parsley or chives and serve immediately.
