Now, I like every single cookie and all of the crackers. In fact, I keep plenty of each handy in my pantry. I like the fact that I can simply open a box whenever I need a snack. No mixing, measuring and no cooking needed.
BUT, sometimes I want to kick it up a notch so those Back to Nature™ snacks become the base for some of my most favorite recipes.
My mom visited last weekend and we were craving mint chocolate chip ice cream. The freezer was bare so I checked my pantry and decided to improvise. I came up with one of the most amazing treats EVER…my Mint Chocolate Chip Cheesecake Squares.
The Back to Nature Fudge Mint Cookies provide the perfect amount of mint flavor and pairs perfectly with the creamy cheesecake bar. Seriously, you have to give this recipe a try. We polished off the entire dessert within 2 days!
- 2 boxes of Back to Nature Fudge Mint Cookies (6.4 oz boxes)
- 5 tablespoons melted butter
- 16 oz cream cheese, at room temperature
- 2/3 cup granulated sugar
- 1 tsp. vanilla extract
- 8 oz whipped topping, thawed
- 1 cup mini semi-sweet chocolate chips, divided
- Place the cookies in a food processor and process until crumbly.
- Pour the crumbs into a bowl and add the melted butter and stir to combine, coating all the crumbs.
- Press into an 8×8-inch baking pan. Press firmly until tight and compact and set aside.
- Beat the cream cheese, sugar and vanilla extra with a mix until fluffy.
- Fold in the whipped topping and gently mix in 3/4 cup of chocolate chips.
- Spread the mixture over the prepared cookie crust and sprinkle the remaining chocolate chips over top.
- Refrigerate for at least 6 hours.
- Cut, serve and ENJOY!
