Who says dessert has to be complicated?
What if I told you that you could whip up an incredible ice cream pie with just THREE ingredients…ok 6 ingredients if you make your own whipped cream?! It’s absolutely doable and actually one of my favorite things to make.
An ice cream pie is a dessert that always look so impressive. Your family will be thrilled when you bring out a show-stopper like that beauty you see above. It looks like it would be difficult to make, when in fact—it’s crazy simple. The hardest part is trying to remain patient while you wait for the pie to set up.
One of the best parts about an ice cream pie is that you have tons of options when it comes to flavor. You definitely want to pick a quality ice cream that you love. Since I could easily demolish each and every flavor of Ben & Jerry’s Ice Cream, that is usually the brand I choose for my pies. That one pint is the perfect amount to fill a crust in an 8-inch pie pan.
And, you know if you were to bring out a pint of any Ben & Jerry’s Ice Creams, you’d be lucky if it would last long enough to serve three people. Surely I am not the only one who will admit to polishing off an entire carton by myself? But, this pie can be cut to serve 8 portions …or 4 if you have folks with a hearty appetite.
When it comes to the crust for an ice cream pie, that will depend on the flavor. Just think about what you would like paired with the ice cream. Sometimes I make a cookie crust, other times I go for a graham cracker crust and then when I am in a tropical mood, I make a toasted coconut crust like I am sharing today.
The whipped cream topping is always optional but I find that it really makes the pie look great. Plus, who doesn’t love homemade whipped cream?

- 4 oz unsweetened coconut flakes, toasted
- 2 1/2 tablespoons butter, melted
- one pint Ben & Jerry’s Pistachio Pistachio Ice Cream, softened
- 1/2 cup heavy cream
- 1 tablespoon sugar
- 1/4 teaspoon vanilla extract
- Spray an 8-inch pie plate with cooking spray.
- Mix the toasted coconut and butter together and press into the bottom of the prepared pie plate. Freeze for 1 hour.
- Spread the softened ice cream into the prepared pie crust and return to the freezer until set, about 1 hour.
- Before serving, prepare the whipped cream by beating the cream, sugar and vanilla with a mixer until medium peaks form.
- Spread or pipe the whipped cream over the top of the pie.
- Garnish with additional toasted coconut and/or chopped pistachios and serve.
Thank you Michelle. I am going to try this recipe, but instead of pistachio I am going to do it with a Ben and Jerrys peanut butter ice cream and break up Reese’s cups all over the top with Chopped cashews and the whipped cream.
I think that sounds AMAZING! Ice cream pies are some of my fave things as they are so easy but so impressive looking! No one has to know they are crazy simple 😉
