Try My Homemade Green Bean Casserole (From Scratch)

The other day I shared a great Green Giant Canned Veggies coupon (no longer available) as well as a recipe for a traditional green bean casserole. That traditional casserole is the one that I generally make throughout the year…to go with my everyday weeknight meals.

But, I try to kick things up a notch at the holidays. I pull out my best recipes to serve up to my family as it’s just a little more special. For my Thanksgiving meal, I always serve up my Homemade Green Bean Casserole (From Scratch).

Now, there is nothing really crazy different about the recipe…it’s green beans in a mushroom soup with crispy onions. But, in my version…I use a homemade cream of mushroom soup and make my own crispy onions. Of course the Green Giant Green Beans are the same—they are a must have in any green bean casserole.

This recipe isn’t difficult but it is a bit more time consuming that the traditional green bean casserole. I think it’s well worth the effort.

Homemade Green Bean Casserole (From Scratch)

Ingredients
  • 2 cans Green Giant Green Beans
  • MUSHROOM SOUP
  • 2 tablespoons butter
  • 12 oz mushrooms, sliced
  • 1/2 medium onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons all-purpose flour
  • 1/2 tablespoon fresh thyme, chopped
  • 1/4 cup Sherry Cooking Wine
  • 16 oz chicken broth or stock
  • salt & pepper to taste
  • 1/2 cup heavy cream
  • CRISPY ONIONS
  • cooking spray
  • 2 large sweet onions, sliced thin
  • 1/4 cup all purpose flour
  • 1/4 cup Panko bread crumbs
  • 1 teaspoon salt
Instructions
MUSHROOM SOUP
  1. Melt the butter in a large saucepan and add the mushrooms. Cook over medium high heat for 15 – 20 minutes until golden.
  2. Add the onions and cook until translucent, approx 2 – 3 minutes.
  3. Add the garlic and thyme and cook until fragrant, approx 1 minute.
  4. Add the flour and cook for 2 minutes, stirring frequently.
  5. Stir in the chicken broth, sherry cooking wine and bring to a boil, stirring frequently.
  6. Reduce heat and simmer over medium for 10 – 15 minutes, until reduced by 1/3 and thickened.
  7. Remove from heat and use an immersion blender to blend the mixture until smooth.
  8. Stir the cream into the hot soup and season with salt and pepper to taste.
CRISPY ONIONS
  1. Preheat oven to 425º F
  2. Combine the flour, Panko bread crumbs and salt in a large bowl.
  3. Add the onions to the flour mixture and toss to coat.
  4. Generously spray a large sheet pan with cooking spray the arrange the coated onions on the pan in an even layer.
  5. Spray the onions with cooking spray and bake for approximately 30 minutes, or until golden and crispy.
ASSEMBLE THE CASSEROLE
  1. Preheat oven to 350º F.
  2. Mix the green beans and mushroom soup and pour into a 1 1/2 quart baking dish.
  3. Bake for 25 minutes.
  4. Top the casserole with the crispy onions and bake an additional 10 minutes.

  1. Thanks so much for the recipe. How much of the crispy onions are you supposed to use for step 3 and how much are you supposed to save for step 4 of “Assemble the Casserole”?

    • Sorry about that…the entire batch of crispy onions go on top of this casserole.
      I cut and pasted from the other recipe to save time typing and didn’t pull that part 😉
