I eat salads multiple times per week. Typically I throw together a salad for myself as a quick lunch. Usually my salad includes some type of lettuce, a protein, whatever veggie I might have handy and probably some kind of crunch….maybe nuts or croutons.

Finally I gotta have some crunch. Nuts or seeds are a must-have in my rice salad with pecans, walnuts, sesame seeds or pepitas being my crunch of choice!

- 1 package Knorr Ready To Heat Chicken & Herbs Flavored Long Grain Rice
- 1 oz feta, crumbled
- 1/4 cup blueberries
- 1/4 cup dried cranberries
- 1/4 cup arugula
- 2 tablespoons pepitas
- 1 green onion, sliced
- 1/4 cup cherry tomatoes, halved or quartered
- olive oil, if desired
- salt and pepper to taste
- Heat the Knorr Rice according to directions.
- Add all ingredients to a large bowl and toss to combine.
- Drizzle with olive oil if desired and season with salt and pepper to taste.
- Serve and enjoy.
