I absolutely love meals where everything cooks up at the same time. That’s why a sheet pan meal is one of my favorite things EVER!
I probably have a dozen or more varieties that I can throw together in a matter of minutes. Once everything is prepped you toss everything on the pan and voila…dinner without having to babysit your entree, sides and starch!
Today I thought I’d share one of my family’s favorite sheet pan meals…my Sheet Pan Crispy Parmesan Chicken & Onion Potatoes.
My guys love this recipe as it gives them that fried chicken texture that they love without a bunch of oil and hardly any effort at all. The secret to this meal is a bottle of Hellmann’s Mayonnaise and a packet of Lipton Recipe Secrets. The mayonnaise helps keep the breading (and all the flavor) stay on the chicken while keeping the chicken super moist.
To get started you want to set up your breading station. Put about a quarter cup of Hellmann’s Mayonnaise into a bowl. Then in another bowl you mix Panko breadcrumbs, some parmesan and a couple of tablespoon of the Lipton Recipe Soup Mix. I usually go for the Onion flavored mix but you can use whatever flavor you prefer.
One you have the breading station ready you just coat the chicken in the mayonnaise and then it’s over to the seasoned breadcrumbs. Pack all the flavor on the chicken and place is down the middle of your oiled sheet pan.
Then you toss your potatoes in a little oil and the remaining Lipton Recipe Secret mix and they go on the pan with the chicken. Throw on some green beans, asparagus, broccoli or your favorite veggie. Be sure to toss in some oil and salt and pepper them before adding to the pan. Once your pan is full, it all goes into the oven to bake up and get delicious.
Without a ton of time or effort, you have a delicious meal. Crispy chicken that’s still juicy and moist paired with perfectly seasoned roasted potatoes that are crisp on the outside and fluffy on the inside plus some tasty green beans. It really doesn’t get much better…or easier!

- 4 – 5 boneless, skinless chicken breasts
- 1/4 cup Hellmann’s Mayonnaise
- 1 envelope Lipton® Recipe Secrets® Onion Soup Mix
- 3/4 cup Panko bread crumbs
- 1/4 cup parmesan cheese, shredded
- 3 tablespoons olive oil, divided
- 1.5 lbs baby potatoes, halved
- 1 pound green beans
- salt & pepper to taste
- Preheat oven to 400º F and oil a large sheet pan.
- Add the Hellmann’s Mayo to a shallow bowl or plate.
- In another shallow bowl, mix the breadcrumbs, parmesan cheese and 2 tablespoons of the Lipton® Recipe Secrets® Onion Soup Mix.
- Dredge the chicken in the mayonnaise to coat all sides then place into the breadcrumb mixture pressing to coat the chicken. Place the chicken down the middle of the oiled sheet pan.
- Toss the potatoes with 1 tablespoon of olive oil and then sprinkle with the remaining Lipton® Recipe Secrets® Onion Soup Mix and toss to coat. Arrange on the pan around the chicken,
- Finally, toss the green beans in the remaining olive oil and season with salt and pepper then arrange on the pan around the chicken and potatoes.
- Place the pan in the oven and roast for 25 to 30 minutes, until the chicken is cooked through and crispy, Chicken should have an internal temp of 165 degrees F. Broil if desired to crisp the potatoes and tops of chicken.
- Serve and enjoy.
