Or serve after dinner for a simply decadent dessert that’s sure to please no matter the season.
I was first inspired to make these Ice Cream Bites a few years back while planning a birthday party for my youngest. The only problem is I underestimated how popular they would be. We had a traditional cake, too, but these bites were such a hit that they were gone in what felt like a matter of seconds! My advice if you want to make this recipe for a similar event? Do yourself a favor and make a double batch. Trust me, you’ll thank yourself later.
Whenever I make my Ice Cream Bites, I always start with Breyers Cookies & Cream. It’s made with premium vanilla grown and shipped direct from Madagascar, along with 100% Grade A milk and cream from cows not treated with artificial growth hormones. Then it’s studded with scrumptious, creme-filled chocolate cookie pieces. As if that wasn’t enough, now there are 20% more cookie pieces than ever before!
To get started you want to mix up the cookie base. Just crush up about 20 chocolate sandwich cookies and stir in 2 tablespoons of melted butter. Drop about a tablespoon of the mixture into a small condiment cup and then press to compact into a tight bottom “crust”.
You can use your fingers or a spoon, but I find it’s easier just to use another cup to press and form the crust.
Then just add the Breyers Cookies & Cream ice cream and press with a spoon to pack and then snap on the lid. Pop the cups into the freezer to set, approximately 4 – 6 hours. Just a tip, if you are serving these to little ones, run a butterknife around the edge and the ice cream bites will pop out with ease.
Serve in cups or remove from the cup and garnish with whipped cream and some more of the crumbles for a summer treat that can’t be beat.
