Ahh, fall. The season when pumpkins go from humble gourds to the centerpiece of so many themed dishes, drinks and desserts. The most obvious example is pumpkin pie, or perhaps the beloved pumpkin spiced latte.
As much as I do love pumpkin pie, there are loads of other fabulous desserts that fall into this category. Take this pumpkin-based take on a traditional mousse. It’s a silky, sumptuous treat that really captures the tastes of the season. It’s like fall in a glass!
Another thing I love about this Pumpkin Mousse? There’s no baking required! Just pull out your mixer and in a matter of minutes you can spoon that rich, creamy goodness into your choice of serving dishes, and enjoy. Layer with crushed graham crackers or ginger snaps for an amazing dessert that just might become your new pumpkin-flavored obsession!
Like so many of my favorite dessert recipes, the original version calls for sugar, but I try to cut calories and sugar whenever possible. So for my Pumpkin Mousse recipe, I use Truvia® instead.
That’s because Truvia® cracked the code for how to create a sweetener that measures cup-for-cup like sugar and bakes and browns in recipes… but with zero calories. That’s a big deal for me considering all the baking I do, especially around this time of year.
Truvia® is America’s favorite stevia sweetener and is great for people looking to reduce calories, including people with diabetes and those looking to reduce sugar in their diets.
- 15 oz canned pumpkin
- 1 cup Truvia® Sweet Complete® Brown Sweetener
- 8 oz cream cheese, softened
- 1 1/2 teaspoons pumpkin pie spice
- 1 teaspoon maple extract
- 1 pint heavy cream
- 1/4 cup Truvia® Sweet Complete® All-Purpose Granulated Sweetener
- 1 teaspoon vanilla extract
- 1/4 cup crushed ginger snaps or graham crackers
- Add the pumpkin, softened cream cheese, Truvia® Sweet Complete® Brown Sweetener, pumpkin pie spice and maple extract to the bowl of a stand mixer.
- Beat on medium until the mixture is smooth and creamy, approximately 4 -5 minutes.
- In another bowl, add the heavy cream, Truvia® Sweet Complete® All-Purpose Granulated Sweetener, vanilla and beat until stiff peaks form.
- Reserve 1/4 of the cream mixture for topping and then gently fold the remaining cream into the pumpkin mixture until combined.
- To serve, add about 1/4 cup of the pumpkin mixture to a cup or bowl then follow with a layer of crushed ginger snaps or graham crackers (approx 1 teaspoon). Follow with another 1/4 cup layer of pumpkin mixture and top with a dollop of the whipped cream and garnish with additional crushed ginger snaps or graham crackers.
- Serve and enjoy. Refrigerate any leftovers.
