We have a fantastic deal on Armour Meatballs this week at Publix.
For me that means a bag of meatballs for a family favorite—Meatball Stroganoff!
This hearty meal is quick and easy to prepare making it perfect for a busy weeknight. You probably have most of the ingredients on hand and the other few items you can pick up when you grab your BOGO deal. Just be aware, it may be so popular, you may not have leftovers.
But, you can always grab enough ingredients to make a second batch!
- 2 tablespoons butter
- 8 oz baby bella mushrooms, sliced
- 1 medium onion, chopped
- 2 cloves garlic, chopped
- 2 tablespoons flour
- 2 1/2 cups beef broth
- 25 oz bag Armour Meatballs
- 2 cups egg noodles
- 1/2 cup sour cream
- chopped parsley for garnish
- Melt the butter in a large non-stick pan over medium heat.
- Add the mushrooms and onions and cook for 10 – 12 minutes, until softened.
- Add the garlic and cook an additional minute.
- Stir in the flour and cook for 1 minute.
- Add the beef broth and meatballs and bring to a boil.
- Simmer uncovered for 10 minutes or until noodles are tender.
- Remove from heat and stir in the sour cream.
- Season with salt and pepper as desired and garnish with chopped parsley.
