My Skillet Dijon Chicken is one of my all-time favorite recipes. I love it for the flavor and the fact that it’s ridiculously easy to prepare. I typically have the majority of ingredients on hand at any time. So on nights when I need dinner in a flash, THIS is the meal I choose!
Check your kitchen… do you have olive oil, butter, onions, garlic, wine, salt, pepper and bottle of Sir Kensington’s Dijon Mustard? If not, you definitely should! I consider all of those items kitchen staples because they add major flavor to so many meals —AND obviously I use them constantly.
If you have those kitchen staples, that’s about 2/3 of the ingredients that you need. As far as the rest, I almost always have chicken breast in my freezer and grow thyme in my garden. So it’s typically the mushrooms and heavy cream that I have to grab. BUT, I have made the dish without the mushrooms and used milk in place of the cream. While that isn’t my preferred version, it will definitely work in a pinch.
But I want you guys to try the original before you start making substitutions. I think you’ll find it’s so delicious, you’ll want keep the ingredients handy so that you can put in on your menu rotation often!

Skillet Dijon Chicken
Ingredients
- 1.5 lbs boneless skinless chicken breast or cutlets - pounded thin to about 1/2" thickness
- 2 tbsp olive oil
- 1 tsp salt
- 1 tsp black pepper
- 1 tbsp butter
- 4 oz mushrooms - sliced
- 2 - 3 garlic cloves - minced
- 1 small onion - sliced
- 2 tsp fresh thyme - chopped
- 1/2 cup white wine
- 3 tbsp Sir Kensington's Dijon Mustard
- 1/4 cup water
- 1/3 cup heavy cream
Instructions
- Heat the olive oil in a skillet over medium hight heat.
- Season the chicken with salt and pepper and add to the skillet.
- Let the chicken sear for 5 minutes, undisturbed, then flip and cook for an additional 4 minutes. Remove to a plate.
- Add the butter to the pan with the mushrooms, garlic, sliced onions and thyme. Cook the vegetables for about 6 minutes, until softened.
- Stir in the wine and cook for 2 minutes, until slightly reduced.
- Whisk in the water and Sir Kensington's Dijon mustard.
- Add the chicken and any juices to the pan and cook for 1 - 2 minutes, until reheated.
- Remove from heat and add the heavy cream. Stir to coat the chicken and serve!
