Many Gen Xers like myself, grew up as latchkey kids. I came home from school to an empty house and started on homework and chores. In addition to standard chores like dishes, dusting and laundry, my list also included cooking! My parents worked long days so I was in charge of cooking most, if not all of our dinners each night.
So I started cooking at a VERY young age. In fact, by the age of about 13, I was cooking full meals for my family!
While my meals weren’t gourmet, they were still pretty tasty. That Loaded Potato Soup that you see above was a dish that I made quite often. I love it so much, I still make it every couple of weeks for my family now.
Potato Soup is super quick, easy and crazy good. It’s the ultimate in comfort food and is super economical. The base recipe is meatless but you can add ham, bacon, chicken or even smoked sausage if you want some protein.
The key to getting good flavor is a packet of Lipton Soup Mix. I prefer it with the Golden Onion Soup Mix but you can really use any variety you love and the soup will taste amazing! Gather a few ingredients and pull out your knife and get to chopping. In a matter of minutes, you will have a hearty and delicious soup that is sure to please!
Loaded Potato Soup
Ingredients
- 3 cups potatoes - peeled and diced
- 3 cups water
- 1 packet Lipton Golden Onion Recipe Soup & Dip Mix
- 1/4 cup celery - chopped
- 1/4 cup carrots - sliced
- 1 small onion - chopped
- 5 tbsp butter
- 5 tbsp flour
- 1 cup milk
- 1 cup heavy cream (or half & half)
- salt & pepper to taste
- desired toppings including cheese, bacon, green onion, sour cream, etc
Instructions
- Place potatoes, carrots, onion, celery, water and Lipton Golden Onion Recipe Soup & Dip Mix in a large pot. Bring to a boil then cook over medium high heat for 10 - 15 minutes… just until potatoes are fork tender.
- Melt butter in a separate sauce pan.
- Whisk flour into melted butter and cook 2 minutes.
- Slowly whisk milk and cream into the roux.
- Continue cooking about 5 minutes until the sauce is thickened.
- Pour the sauce into the pot with the potatoes and other vegetables.
- Cook the soup for 5 minutes then season to taste and serve topped with cheese, bacon crumbles, green onions and sour cream (if desired).
