Roasted Carrots with Lemon Dill Sauce
Ingredients
Lemon Dill Sauce
- 1/2 cup Hellmann's Mayonnaise
- 1 clove garlic - minced
- 1 tbsp fresh lemon juice
- 1- 1/2 tbsp fresh dill - chopped
- 2 tbsp cream
- 1/4 tsp salt
- 1/4 tsp fresh cracked black pepper
- 2 tsp fresh chives - chopped
Carrots
- 2 lbs carrots
- 1/4 cup Hellmann's Mayonnaise
- 1/2 tsp salt
- 1/2 tsp fresh cracked black pepper
- 1/2 tsp garlic powder
Instructions
Lemon Dill Sauce
- Add all ingredients to a small bowl and whisk to combine.
- Cover and chill until ready to use.
Carrots
- Preheat oven to 400º F.
- Wash the carrots and dry with a paper towel. Place on a large sheet pan.
- Add the Hellmann's Mayonnaise to a small bowl and mix in the salt, pepper and garlic powder.
- Spoon the mixture over the carrots and toss to coat completely.
- Roast the carrots for 35 - 40 minutes, until soft and they begin to caramelize.
- Place the roasted carrots on a serving dish and drizzle with the prepared lemon dill sauce.
