To get started, just skewer delicious Extra Thick Cut Hatfield Bacon with chunks of red potatoes. Throw the skewers on your grill and cook over medium heat until the potatoes are charred and tender and the bacon is cooked crisp.
Those large slices of bacon are critical for this dish to allow for both the bacon and potatoes to get done at the same time.
You want to make sure to keep your flame low to avoid cooking the potatoes and bacon too fast. Slow cooking will allow the bacon fat to drip over the potatoes and impart all that deliciousness.
While the skewers are cooking, you only need a couple of minutes to prepare that tasty vinaigrette. Gather lots of fresh herbs, olive oil, Dijon mustard, apple cider vinegar, garlic, salt and pepper. Everything gets mixed up and then you are ready to put it all together.
Once the skewers are done, you can cut the potatoes into bite size pieces and chop the bacon. Toss everything together in a bowl and it’s ready to go!

Grilled Potato Salad with Bacon
Ingredients
- 2 lbs red potatoes - halved or quartered
- 22 oz pkg Hatfield Hickory Smoked Extra Thick Cut Bacon
- 1/4 cup red onion - thinly sliced
Vinaigrette
- 1/2 cup extra virgin olive oil
- 1 tbsp Dijon mustard
- 2 cloves garlic - minced
- 3 tbsp apple cider vinegar
- 1 tsp salt
- 1/2 tsp black pepper
- 1/3 cup mixed fresh herbs including dill, basil, parsley - chopped
Instructions
- Skewer the potatoes with the bacon, weaving the bacon around each potato chunk.
- Grill the skewers over medium heat with a low flame to reduce flare ups. Cook for 20 - 25 minutes, until potatoes are charred and fork tender and the bacon is crisp.
- While the skewers cook, add all the vinaigrette ingredients to a small bowl and whisk until combined.
- Once the skewers have been cooked, remove the bacon and potatoes from the skewers. Cut the potatoes into bite size chunks and chop the bacon and place in a bowl. Add the thinly sliced onion.
- Pour the prepared vinaigrette over the potato mixture and toss to coat. Serve and enjoy!
