Temperatures are increasing and they will continue to rise over the next couple of months. Summertime in the south can get intense and temperatures can get up into the mid/high 90’s in places… sometimes even higher!
When it gets hot, I like to do most of my cooking outdoors. I try to keep the use of my stove and oven to a minimum in an attempt to keep my home as cool as possible. My AC needs all the help it can get to keep the house cool when it’s super hot outside. So for the next few months, I do a LOT of cooking on the grill.
One of my all-time favorite things to cook on the grill is a foil packet dinner.
A foil packet meal is the ultimate in convenience. You get a complete meal that’s neatly packaged into a single serve packet that you can enjoy and then toss. I love them because prep is simple and then the packets just sit on the grill to cook. There’s no stirring, basting or turning. You just pop them on the grill and set a timer.
In a matter of minutes, you get a perfectly steamed meal that packed with big flavor. And when everyone is done eating, cleanup is a breeze. Just toss the foil in the trash and dinner is done!
My ideal version of a foil packet meal includes a protein, a starch and some veggies. I want to be able to pack a full meal in that packet so that I don’t have to bother with anything else. And since Knorr Sides are a favorite at my house, they are a perfect addition to my foil packets.
A family favorite is the Salmon & Rice Foil Packet that you see above. It combines great-tasting Knorr Sides Chicken Flavored Fried Rice with some salmon, carrots and snap peas. And since the whole thing is ready in less than 30 minutes, from start to finish, it’s one of my favorite meals for a busy weeknight.
To get started, just gather your ingredients and grab some heavy duty aluminum foil.
Next, I start by placing the Knorr Sides mix in a large bowl (or mixing cup) and adding some chicken broth. You want to let the rice sit in the broth for about 10 minutes before you prep your foil packets. The rice will absorb some of the liquid while it sits.
While the rice is doing its thing, you want to cut large sheets of foil. You want enough foil to create the packet PLUS allow extra room for the steam. If the foil it tight around the ingredients, there won’t be enough room for the steam to circulate and cook the food. So in this case, too much foil is really better. I usually cut my foil about 18″x18″ per sheet.
Once the rice has absorbed some of the liquid, you want to start building your packets. Spoon the rice onto the middle of each foil sheet, reserving the excess liquid. Add the carrots and snow peas and then add the seasoned salmon over top.
Top the fish with a little butter then pour over any remaining broth from the rice. This is the liquid that will be needed to cook the rice and prevent it from burning.
Next, you want to create the foil pouch by folding the top and then the sides, sealing the pouch tightly yet leaving room for air to circulate.
Place the packets on the grill and cook for 10 minutes. Then, carefully open the packets and enjoy!

Salmon & Rice Foil Packets
Ingredients
- 1 pkg Knorr Chicken Flavored Fried Rice
- 2 cups chicken broth
- 1 cup carrots - cut into slices or matchsticks
- 1 cup pea pods
- 1 lb salmon -cut into 4 fillets
- 2 tsp salt
- 1 tsp black pepper
- 4 tsp butter
Instructions
- Place the Knorr Chicken Flavored Fried Rice into a bowl and stir in the chicken broth. Allow to sit for 10 minutes to absorb some of the liquid.
- Cut 4 large 18"x18" sheets of heavy duty aluminum foil.
- Divide the rice and spoon into the center of each of the 4 foil sheets.
- Divide the carrot and pea pods and place next to the rice.
- Season each salmon fillet with salt and pepper and place atop the rice
- Place a teaspoon of butter on each salmon fillet.
- Create the foil pouch by folding the top and then the sides, sealing the pouch tightly yet leaving room for air to circulate.
- Place on a grill heated to medium high and cook for 10 minutes.
- Carefully open the packets and enjoy!
