We all know that a Publix rotisserie chicken is a great option for a meal in a pinch. And while I love the convenience, rotisserie chicken can be a bit boring. So I look for ways to punch it up a bit.
Sometimes I toss it with some pasta or use the chicken for a salad. But, when I want BIG flavor, one of my all-time favorite ways to use that rotisserie chicken is for a hearty and delicious Chicken Pesto Panini.
My sandwich uses a total of five ingredients that combine for a super hearty and flavorful sandwich. And when it comes to the five ingredients you use, choosing quality ingredients will mean the difference between an OK sandwich and a GREAT sandwich.
For the bread, you really want to skip the bagged loaf bread and go with a good fresh baked bread from the bakery. A sourdough, Italian or 5-grain bread will all work. The second ingredient is the chicken of course. Next, you want a good pesto… either homemade or your favorite pre-made variety. Roasted red peppers add just the right amount of sweetness and a great texture that compliments the chicken. Roast fresh bell pepper or get a jarred version if you are short of time. The final ingredient is the cheese and that is a critical ingredient. I always go for the best and that means Galbani Fresh Mozzarella. Chicken Pesto Panini
Ingredients
- 2 slices bakery bread - Sourdough, Italian, 5-grain, etc
- 1 tbsp pesto
- 2 tbsp roasted red pepper - roughly chopped
- 3 oz rotisserie chicken - cut into bite-sized chunks
- 2 slices Galbani® Fresh Mozzarella Cheese
Instructions
- Spread the pesto on one slice of bread and top with the chopped chicken, roasted red pepper and two sliced of mozzarella. Top with the second slice of bread
- Pre-heat your panini press spray with cooking spray then cook the sandwich for 4 - 6 minutes, until golden. NOTE: You can also cook the sandwich on a grill pan. Spray with cooking spray and cook the sandwich for 2 -3 minutes per side or until golden.
*No significant difference has been shown between milk derived from cows treated with artificial growth hormones and those not treated with growth hormones.
