I have one kiddo who went back to school this week and the other goes back next week. Our lazy summer days are over and now it’s time for a new, more hectic schedule.
It will take me a couple of weeks to adjust to our new routine. Getting up early will be hard for all of us, but I am actually dreading those late night dinners the most. That means it’s time to plan for easy meals so I don’t end up in the kitchen all night!

Meatloaf is a great option for a busy weeknight. It’s a great prep-ahead meal that you can make and then bake when needed. Plus, if you plan ahead and make a large loaf, you’ll have enough for multiple meals.
Now before you start groaning about meatloaf being a boring, bland dish that’s only suitable for your grandma… I have a recipe that goes way beyond the basic meatloaf. My Sriracha Meatloaf is far from bland or boring. It’s a deliciously moist and flavorful dish that your whole family will love.
While my version starts out as a standard recipe, the key to the great flavor is a combination of delicious TABASCO® Sriracha Sauce and TABASCO® Sweet & Spicy Sauce. The sauces add the perfect amount of flavor and heat that takes this dish to another level. It’s comfort food with a kick!

Sriracha Meatloaf
Ingredients
Meatloaf
- 1 tsp vegetable or canola oil
- 1 med onion - chopped
- 2 tsp sesame oil
- 3 cloves garlic - minced
- 1 tbsp fresh ginger - grated
- 3 green onions - chopped
- 1.5 lbs lean ground beef
- 1 lb ground pork
- 3 tbsp TABASCO® Sriracha Sauce
- 1 cup Panko bread crumbs
- 1/4 cup milk
- 2 eggs - whisked
- 3 tbsp ketchup
- 1 tsp salt
Meatloaf Glaze
- 3 tbsp TABASCO® Sweet & Spicy Sauce
- 1 tbsp ketchup
- 1 tbsp brown sugar
- 1 tsp soy sauce
Instructions
- Preheat oven to 350º F. Line a large sheet pan with parchment.
- Heat the vegetable/canola oil in a medium skillet. Add the onions and cook for 2 - 3 minutes, until softened.
- Add the sesame oil, green onions, garlic and fresh ginger and cook an additional minute, until fragrant. Remove from heat and allow to cool slightly.
- In a large bowl, add the ground beef, ground pork, TABASCO® Sriracha Sauce, Panko bread crumbs, milk, eggs, ketchup and salt. Using your hands, mix until combined. Do not overwork the mixture.
- Place the meat mixture on the prepared sheet pan and use your hands to form a loaf. Bake at 350º F for 45 minutes.
- While the meatloaf bakes, create the glaze by mixing all ingredients until combined.
- Once the meatloaf has baked for 45 minutes, remove from oven and brush on the prepared glaze. Return to oven and cook another 30 - 40 minutes, until cooked through (160º F) and juices run clear.
- Allow to cool slightly then slice and serve. Drizzle with additional TABASCO® Sweet & Spicy Sauce if desired.
