Since I have flatbread pizza on my menu this week, it’s time for me to grab a couple of the large 24-ounce tubs of siggi’s Icelandic style skyr so I can make a batch of DELICIOUS 2-Ingredient Flatbreads!
Yep, those tasty flatbreads you see above were made with just siggi’s Icelandic style skyr and self rising flour… nothing else! They are crazy easy to make and are perfect for a variety of meals and recipes.
If I run out of bread, I never worry… a flatbread is perfect for all kinds of tasty sandwiches. Plus, they are ideal for a quick quesadilla, a hearty breakfast wrap and of course a delicious flatbread pizza. With so many different ways to put these tasty flatbreads to use, I try to keep a some in my refrigerator (or freezer) so I can grab them as needed.
These flatbreads can be stored at room temperature for about 4 – 5 days if you keep them in a sealed container. They’ll stay fresh in the refrigerator for about 2 weeks and can be frozen up to 6 months. So there’s no reason you ever need to run out of these tasty flatbreads.

2-Ingredient Flatbread
Ingredients
- 1 3/4 cups SELF RISING Flour
- 1 cup siggi’s Icelandic style skyr
Instructions
- Add siggi’s Icelandic style skyr and the flour to a medium bowl and mix with a wooden spoon or rubber spatula until a ball begins to form.
- Pour the dough onto a lightly floured surface and knead for 1 - 2 minutes then shape into a round disc.
- Divide the dough into 8 portions and roll each portion into a ball.
- Lightly flour your work surface and use a rolling pin to roll out each portion into thin rounds (approximately 1/8" thick).
- Heat a non-stick pan over high heat (no oil needed).
- Place one flatbread in the pan and cook for 1 - 2 minutes. The flatbread will puff and brown. Flip to the other side and allow to cook another 1 - 2 minutes, until it puffs and gets brown patches. Repeat with the remaining pieces, wrapping the cooked flatbreads in a tea towel as they are done.
