Easy Orange Chicken
Ingredients
- 1 pkg Knorr Chicken Flavored Fried Rice - cooked according to package instructions
ORANGE SAUCE
- 1 cup orange juice
- 1/4 cup granulated sugar
- 1/4 cup brown sugar
- 1/4 cup soy sauce
- 2 tbsp rice wine vinegar
- 1 tbsp fresh ginger - grated
- 2 cloves garlic - minced
- 1 tbsp corn starch
CHICKEN
- 1 lb chicken breast - cut into 1" cubes
- 3/4 cup seasoned panko breadcrumbs
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 cup Hellmann's Mayonnaise
Instructions
ORANGE SAUCE
- In a medium saucepan, add the orange juice, sugars, soy sauce, rice wine vinegar, ginger and garlic and heat over medium for 3 minutes.
- Whisk the cornstarch with 1 tablespoon of water to make a slurry. Add the slurry to the sauce and whisk to combine. Continue to cook for 3 - 5 minutes, until the sauce thickens. Remove from heat and set aside until ready to use.
CHICKEN
- Combine the bread crumbs, salt and pepper in shallow dish; set aside.
- Toss chicken with Hellmann's Mayonnaise in medium bowl, then dip each coated chicken piece in the breadcrumb mixture, turning to coat on all sides.
- To cook, preheat the air fryer to 380ºF.
- Lightly spray the air fryer basket with cooking spray and arrange the coated chicken in the basket, allowing room between each piece.
- Cook for 12 minutes, shaking the basket half way through cook time. Toss in the prepared orange sauce and serve over Knorr Chicken Flavored Fried Rice.
