The big game is almost here, and if you are hosting a watch party, you might want to start planning your menu.
A good game day menu will include plenty of refreshing drinks and lots of tasty snacks. I find that it’s nice to include a variety of options so there’s something for everyone. For my fans of flavor, I like to serve up foods with a little kick. My Spicy Chicken Taquitos offer a punch of flavor and a touch of heat. They are the ultimate finger food that’s ideal for a day of football fun!
And along with amazing flavor, they are crazy simple to make. In fact, I typically prep a bunch ahead of time and then pop them in the oven in batches as my guests arrive. The recipe is easy to double, triple or quadruple if needed. You can make one batch or if you have a large group of football fanatics, make 4 or more!
Since there aren’t a bunch of ingredients to buy, this one is also easy on the budget. All you need is some chicken, cheese, tortillas and some Hellmann’s Real Mayonnaise. And since Hellmann’s is on sale right now, you can whip up a batch without breaking the bank!

Spicy Chicken Taquitos
Ingredients
- 16 corn tortillas
- 2 cups cooked chicken - shredded
- 1/2 cup Hellmann's Real Mayonnaise
- 1 tsp water
- 1 tsp lime juice
- 1/2 tsp chili powder
- 1/4 tsp chipotle powder
- 1/2 tsp smoked paprika
- cooking spray or olive oil
- 1 cup Monterrey Jack Cheese - shredded
Instructions
- Preheat oven to 400° F. Line a baking sheet with parchment paper and set aside.
- In a large bowl, mix the shredded chicken, Hellmann's Mayonnaise Dressing, water, lime juice, chili powder, chipotle powder, smoked paprika and shredded cheese. Set aside.
- Heat the tortillas in a skillet for a few seconds, just until pliable.
- Spoon about 2 1/2 tablespoons of the chicken mixture onto each tortilla and roll tightly.
- Place the rolled tortillas, seam side down, onto the prepared pan. Spray with cooking spray and bake for 15 - 20 minutes, turning at least once to ensure all sides crisp.
- Remove from oven and serve with additional toppings as desired.
