Need a quick and easy meal idea for a busy weeknight? My Easy Ham Fried Rice is made with leftover rice for a meal that comes together in about 20 minutes.

Easy Ham Fried Rice
Ingredients
- 2 tbsp vegetable oil
- 1/2 cup frozen peas
- 1/2 cup carrots - peeled and chopped
- 2 - 3 green onions - chopped
- 2 eggs - beaten
- 8 oz Hatfield Ham Steak - chopped
- 3 cups cold cooked rice
- 1/4 cup teriyaki sauce
- salt & pepper - to taste
Instructions
- Heat 2 tablespoon of oil in a non-stick skillet or wok and add the ham, peas, carrots, green onion and egg and sauté until the eggs are cooked.
- Add the rice to the pan and stir fry until heated through and the rice begins to crisp about 3 – 5 minutes.
- Add the teriyaki sauce and toss to combine. Remove from heat and season with salt and pepper to taste. Serve with additional green onions if desired.
