Knorr Sides, 4 to 5.7 oz, BOGO
If you need a quick and tasty one-dish meal, this Cheesy Chicken & Broccoli Bake is a surefire winner. The recipe is simple and quick, making it an ideal choice for a delicious and nutritious weeknight dinner. Cheesy Chicken & Broccoli Bake
Ingredients
- 2 lbs chicken thighs
- 2 tsp seasoned salt
- 2 packages Knorr® Rice Sides™ - Cheddar Broccoli
- 2 cups water
- 1/2 cup milk
- 1/2 cup cheddar cheese - divided
- 12 oz broccoli florets
Instructions
- Preheat oven to 400° F.
- Season the chicken thighs with the seasoned salt and place in a 13 x 9-in. baking dish. Place in oven and bake for 20 minutes.
- Mix the Knorr® Rice Sides™ - Cheddar Broccoli, water, milk, broccoli and 1/4 cup of cheese in a large bowl then pour around the chicken. Bake for an additional 20 minutes.
- Remove from oven, sprinkle with the remaining cheese and allow to sit for 5 minutes. Serve and enjoy!
I realized half way through prep that as written, this recipe is very flawed.
-I used a 12oz bag of fresh broccoli which didn’t fully cook. Frozen may have cooked better.
-if any rice sticks out of the liquid (stuck in the broccoli or on top if the chicken) it doesn’t cook.
I tried to remedy both of these issues by trying to submerge the broccoli as much as possible and brushing the chicken off as much as I could. I also covered the dish in foil hoping there would be a steam effect. (Note- I tried pouring the mixture around the chicken as the recipe states but inevitably, rice got on top.)
There are dozens of versions of this recipe out there. You would be better off going with one of those.
