Plus since they can be prepared in advance, you have more to spend more time socializing and less time slaving over a hot stove.

A hearty strata is my recipe of choice when I need to feed a group for breakfast or brunch.

Don’t be intimidated by the name, a strata is just a casserole of bread and egg with tasty fillings like meats, cheeses and veggies. Think of it as a savory bread pudding that you can customize however you like!

While I vary my fillings, a must-have for all of my strata recipes is Eggland’s Best 100% Egg Whites. They’re made from farm-fresh eggs from hens that eat a healthy, all-vegetarian diet of healthy grains. Their feed contains no added hormones, antibiotics or steroids, and no animal by-products, recycled, or processed foods. Easy to use, they are the easiest way to whip up a delicious strata in no time flat!

I am sharing my Ham, Spinach & Cheese Strata below. Feel free to add or modify as you’d like to make it your own.

Ham, Spinach & Cheese Strata

Ingredients
  

  • 1 tsp olive oil
  • 1 small onion - chopped
  • 12 oz baby spinach
  • 1 red bell pepper - chopped
  • 1 loaf Italian Bread - crust removed and cubed
  • 1 1/2 cups Eggland's Best 100% Egg Whites
  • 2 cups whole milk
  • 1/2 cup heavy cream
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 cup chopped ham
  • 1 cup sharp cheddar cheese, shredded
  • 1 cup fontina cheese, shredded
  • 1/4 cup parmesan cheese

Instructions
 

  • Lightly grease a 3-quart baking dish with cooking spray; set aside.
  • Heat the oil in a large non-stick skillet and cook the onion and bell pepper for 2 - 3 minutes, until softened. Add the spinach and cook until wilted. Remove from heat.
  • Layer bread cubes, cooked veggies, ham, and cheeses in the prepared baking dish.
  • In a large bowl, add the egg whites, milk, heavy cream, salt and pepper and whisk to combine. Pour over bread mixture. Cover and refrigerate for 8 hours to overnight.
  • Preheat the oven to 350º F. While the oven is heating, let casserole sit at room temperature for at least 30 minutes before baking.
  • Bake the casserole in the preheated oven for 1 hour - 1 hour and 15 minutes, until a knife inserted in to the center comes out clean. Let the casserole stand for 10 minutes before serving.
