Sweet Potato & Brown Sugar Pork Hash
Ingredients
- 1 pkg Hatfield Savory Brown Sugar Pork Loin Filet, cut into bite-sized cubes
- 2 medium sweet potatoes, cubed
- 1 red bell pepper, cubed
- 4 large eggs
- 2 tbsp olive oil, divided
- 1 tsp salt
- 1/2 tsp pepper
Instructions
- Preheat oven to 400ºF.
- Place the sweet potatoes in a large saucepan. Add water and cover by 2 inches. Bring to a boil and cook the sweet potatoes 5 minutes, until fork tender. Drain and set aside.
- While the potatoes are boiling, heat 1 tbsp of oil in a large oven-safe skillet and then add the cubed pork. Sauté for 5 - 6, minutes until the pork is browned. Remove from skillet and keep warm.
- In the same skillet, heat the remaining oil and add the cooked sweet potatoes, bell pepper and season with salt and pepper. Cook for 8 - 10 minutes stirring occasionally, until the peppers have softened and potatoes are browned.
- Add the pork back to the pan and stir to combine.
- Create 4 wells into the hash and add a cracked egg into each hole.
- Place the pan in the oven and bake until eggs are cooked to your liking, about 5 - 7 minutes. Serve immediately.
