Fall is officially here and for me that means that is is time for some of my favorite recipes using Hurst Family Harvest Beans. Of course I use dried beans throughout the year, but during the fall and winter I use at least triple the amount that I use in the spring and summer. You just can’t beat a big hearty bowl of soup or stew on a chilly day.
Besides being delicious, Hurst beans are so convenient and easy to prepare. I have had every single variety that they offer and can assure you that if you can follow basic directions – you can prepare a fantastic meal. Hurst Family Harvest beans offer something you don’t find in an ordinary bag of beans. They provide a fantastic recipe on each bag and include a flavor packet that is all natural (no artificial flavors or preservatives).
All you have to do is grab some pantry staples and you will have a dish your family will love. Just yesterday I pulled out my crock pot and threw together what I think might be the best soup I have EVER made!
Sunday at my house is usually crazy. We try to pack as much as we can into the weekends. My husband and my oldest son spent the day at the Braves game with his Cub Scout troop. That meant that Jeb and I were alone to get all of the errands accomplished as well as the typical Sunday to do list. I knew the day was going to be super busy, so right after I got breakfast finished I decided to get dinner going. It took me less than 10 minutes to throw the ingredients in my crock pot. We were gone most of the day and I came home to the most incredible smell of Chicken Sausage and Lentil Soup. Seriously…my mouth was watering as soon as I walked in the door.
The bag of Old World Lentil Soup has a great recipe on the back of the bag, but I opted to change it up and use some of the veggies in my crisper. You guys know I am all about sticking in veggies whenever I can. Check out my recipe for Chicken Sausage and Lentil Soup:
- 1 bag Hurst Family Harvest Lentils
- 1 package pre-cooked chicken sausage
- 4 carrots peeled and sliced
- 3 ribs of celery sliced
- 1 onion chopped
- 2 large tomatoes diced (or 1 can diced tomatoes)
- 2 cloves of garlic chopped
- 1 bay leaf
- 1 teaspoon oregano
- 10 cups of water
- 1 tablespoon chicken base (or chicken flavor boost concentrate or bouillon)
- Add everything to your crockpot except the Hurst seasoning packet.
- Cook on low for 8 – 10 hours.
- About 15 minutes prior to serving, add the seasoning packet to taste.
- If you prefer a thicker soup, puree about a cup of the cooked beans and add back to the soup. You can also use an immersion blender and pulse for 2 to 3 seconds.
- Serve with crackers.
I was able to put together this recipe just using things I already had on hand. If I had to estimate the cost of the whole meal, I would guess that you could put this one together for around $10 (less for all us coupon savvy folks). That includes the sausage, veggies and a bag of Hurst Family Harvest beans at a great low price of $2.99. You will notice that this soup serves 8. That means you can create a delicious, hearty meal for about $1.25 per serving!

I would like to try the white beans in Pasta e Fagioli soup. Leave out the Hurst Seasonings, use chicken stock, a ham bone, some bacon, canned tomatoes, carrot, celery, thyme, basil, onion, garlic and parsley. Add cooked macaroni a few minutes before serving. Top with parmesan.

I take the black bean soup mix and add 1 1/2 pounds of ground turkey, a can of rotel lime and cilantro version, a can of red kidney beans, 1 can of cream corn, 1 can of corn, 1 can of tomato sauce 8 oz., a pack of taco seasoning low sodium, a pack of dry ranch dressing and a little cracked red pepper for extra heat.
It is my moms version of the easy taco soup with a little extra kick.
serve with tortilla chips or crackers, sour cream, and shredd cheese you can even add some fresh pico de gallo

chicken stock

1 bag Hurst Family Harvest Old World Lentil Soup Mix (now available at all Publix stores!)
2 tablespoons olive oil
1 cup chopped carrots (from 2 large or 4 small carrots)
1 cup chopped onion (from 1 small onion)
2 cloves garlic, minced
6 cups water
1 teaspoon kosher salt
½ teaspoon black pepper
12 ounces salmon fillets, skin off and broken into 1 inch chunks
4 dashes Tabasco sauce
Directions
Rinse and drain the lentils.
Heat oil in a large soup pan over medium-high heat. Add the chopped carrots and onions and cook until the onions start to soften, about 5 minutes. Add the garlic and cook for 30 seconds, stirring. Add the lentils, the flavor packet, 6 cups of water, salt and pepper and bring to a boil. Reduce heat, cover the pan and let simmer for 25 minutes or until the lentils are tender. Add the salmon and simmer with the pan uncovered for 4 – 5 minutes or until the salmon chunks just start to flake and are cooked through. Stir in the Tabasco sauce and check seasoning, add more salt, pepper and Tabasco if desired.

Ingredients:
•1 pound dried red beans
•1 1/2 pounds smoked sausage cut into chunks
•1 ham hock or ham bone
•1 cup chopped onion
•1 clove garlic minced
•1 teaspoon dried thyme
•1 teaspoon freshly ground pepper
•1/2 teaspoon sage
•1/8 teaspoon cayenne pepper
•salt to taste
•freshly cooked white rice
Preparation:
Soak beans overnight in cold water. Drain and put the beans in a large pot or Dutch oven. Add fresh water to cover, along with the sausage and ham, onion, garlic, thyme, pepper, sage, and cayenne. Bring to boil over medium high heat.
Reduce heat to medium low, cover and simmer until beans are tender, adding more water if necessary to keep them from drying out. This will take 2 to 3 hours. Add salt to taste. Discard ham bones. Remove about 1/4 cup of beans from mixture and mash; return to Dutch oven and stir. Simmer 15 more minutes.
Serve over hot rice.
Serves 6.

Chiotle Lime Black Bean Soup:
you will need:
1 package Chipotle Lime Black Bean Soup
2 tbs. olive oil
1 cup diced onion
1 cup diced green bell pepper
2 cloves garlic
8 oz. diced smoked sausage
Instructions:
Rinse and sort through the beans. Pour beans into a large bowl or pot and cover with 2 inches of warm water. Allow beans to soak over night, or at least 4 hours. Drain and discard water.
Add olive oil to a large soup pot over medium-high heat. Sauté the onion, pepper, garlic, and sausage for 5-6 minutes until onion becomes translucent and sausage begins to brown.
Add 7 cups of water and rinsed beans. Turn the heat to high and bring mixture to a rolling boil. Stir periodically.
Reduce the heat to low and cover the pot. Simmer (covered) for 60 minutes.
Uncover and check beans for doneness. Continue to simmer for 15 minutes.
When fully tender, add contents of seasoning packet.
Simmer for additional 10 minutes before serving.

we also love the lentils so we’ll have to try out your recipie, but I put in Brat’s and make some mashed potatoes to put the goods over for my boys since they won’t touch soup but love beans (and brats).

You will need:
1 package Traditional Split Pea Soup
2 tbs. olive oil
1 cup chopped onion
2 cloves chopped garlic
1-2 ham hocks, or 1/2 lb. diced ham
Juice from 1 lemon
Instructions:
Rinse and sort through the dry split peas.
Add olive oil to a large soup pot over medium-high heat. Sauté the onion and garlic for 5-6 minutes until onion becomes translucent.
Add 7 cups of water, ham, and rinsed peas. Turn the heat to high and bring mixture to a rolling boil. Stir periodically.
Reduce the heat to low and cover the pot with a lid. Simmer (covered) for 45 minutes.
Uncover and remove the ham hocks. (Trim ham off of bone and return to pot).
When soup reaches desired consistency, add lemon juice and contents of seasoning packet.
Simmer for additional 10 minutes before serving.
Ham and Bean Soup:
1 package tri-bean soup mix
2 quarts water
1/2 pound leftover ham bone with meat attached
1/2 onion, finely diced
1 carrot, sliced
1 stalk celery, diced
1/8 tsp garlic powder
1/8 tsp ground black pepper
1/4 tsp paprika
In a large stock pot, combine the water, ham bone and beans. Bring to a boil, reduce heat and simmer until beans are close to soft.
Remove bone and cut off remaining meat. Remove about 1/3 of the beans and mash with potato masher or food processor.
Return ham and beans back to stock pot and add the onion, carrot, celery, garlic powder, pepper and paprika. If you are using dripping from a previously cooked ham, you may add those now. Simmer until vegetables are tender and serve hot.
For a garnish, we often use finely diced onions (white or green) and fresh parsley.

Sausage, white bean and kale soup using white bean chili beans
Brown 1 package of sweet Italian sausage (cut the casings off and crumble in a dutch oven) or for a lighter version use ground turkey or turkey or chicken Italian sausage. I have found that this tastes better than just buying the sausage already ground up like ground beef.
Brown 1 diced onion with the meat
2 cups of fat free, low sodium chicken broth
1 bag of pre-washed cut kale
1 bag of Hurst’s white bean chili beans (prepared according to the instructions on the bag) or cook with the soup and cook the soup for the length of time the beans should be cooked
garlic powder or garlic cloves, oregano and salt and pepper to taste
1/2 teaspoon of red pepper flakes
2 cups of milk (skim, 2% or whole), evaporated milk or half and half-whatever you have on hand
Add water as needed and cook until beans and kale are tender.

Ingredients
1 tablespoon olive oil
1 Yellow onion (chopped)
1 Half green pepper
Salt to taste
Freshly ground black pepper
1 tablespoon chopped garlic
Cilantro
1-2 carrots (optional)
1 pound dried green split peas, picked over and rinsed
8 cups chicken broth
Directions
In a large pot over medium heat, heat the oil. Add the onions, cilantro and green pepper. Season with salt, black pepper. Saute for 2 minutes. Add the garlic, cook for 1 minute. Add the broth then add split peas, carrots and bring to a boil, reduce the heat to medium and simmer, stirring occasionally, for 45 minutes, until the peas are tender.
Serve over white rice or on it’s own.

I make a really good chili with canned tomatoes, ground turkey, black beans, a can of Bush’s smokehouse grillin’ benas and a mix of spices including cumin, paprika, and garlic. I let it cook down in the crockpot for about 12 hours and it takes on the consistency of a sloppy joe. So good.

Love the tri-bean soup mix. I just add smoked sausage and can of tomatoes to the beans in the crock-pot. My house has to have meat in every dinner but this is super easy. I usually server with some crusty bread from the bakery or in a bread bowl.

I would use the homestyle tri-bean without the seasoning packet and I would turn it into chili. First I would soak and cook the beans according to the package.Then I would add a can of crushed tomatoes, chili seasoning, diced green peppers and onions to it for an easy chili.

I love to make Italian Sausage Soup. Here goes:
Brown 1 lb. Italian sausage with about half a diced onion (onion is optional but adds great flavor.) Add 8 oz. beef stock, 2 cups of water, and 1 can of petite diced tomatoes. Add 2 cups of white beans. Add 1/2 tsp dried basil. Sprinkle with freshly grated parmesan cheese before serving. Great with thick crusty bread.

I would like to try the black beans. I would fix them as directed on the package. Then, mash them with a little of the broth. Put a layer of beans in a clear shallow dish. Next, salsa, red onions, shredded cheddar cheese, sour cream, lettuce and tomatoes. Yum!

4 tablespoons (1/2 stick) butter
1 tablespoon minced garlic
3/4 cup diced onion
1 1/2 cups chopped green chiles (fresh or canned)
1 pound boneless, skinless chicken breasts, finely chopped
1 tablespoon ground cumin
1 tablespoon dried oregano
1 to 2 teaspoons ground black pepper
1/2 teaspoon white pepper
Pinch red pepper flakes
1/2 bunch cilantro leaves, chopped
Directions
Rinse beans well, cover with cool water, and soak for 2 hours. Drain. Put the beans in large pot with the chicken stock and bring to a boil over high heat.
In a saucepan, heat the butter over medium heat. Add the garlic, onion, and chiles and saute for 5 minutes. Add chile mixture to pot with beans. Add the chicken, cumin, oregano, pepper, white pepper, red pepper flakes, and cilantro. Lower the heat to medium and cook, stirring occasionally, for approximately 1 1/2 hours. Serve with cornbread, if desired.

leftover ham bone
Dice 2 cups of ham
Dice smoked sausage links
Small onion diced
Fresh jalapeno diced (use seeds if you like spicy)
Dice 1 to 2 garlic cloves
Salt/Pepper to taste
Combine chicken stock, water, garlic, ham bone and beans. Bring to a boil, reduce heat and simmer until beans are close to your personal consistency of texture.
Add sliced sausage, diced ham, onion, diced jalapeno, salt and pepper to taste. Simmer until vegetables are cooked.

Their white chicken chili recipe sounds fantastic. I would add grilled chicken strips, cut up into bite sized pieces, instead of the ground chicken. I’d probably throw in some salsa too and also include the tortilla strips on the top. Yum!

I like to use the recipes on the bags for a guide, and then add or change depending on what I have on hand.
Homestyle Tri-Bean Soup Modified
pack of beans
1-2 onions depending on size and preference
fresh or minced garlic
smoked ham hocks or diced ham or bacon or smoked sausage or leftover ham bone or even turkey or chicken bones- (use any or all depending on how meaty you like)
1 can tomatoes diced or whole or crushed- whatever you have
Soup stock, broth or bouillon, any flavor (i like the ham soup base)
any veg you have in crisper-carrots? celery? radish? greens? potato? tomato? its all good
Follow recipe on bag adding the extra veg to crock pot
If you use bacon or smoked sausage, brown it gooooood first in a skillet. I cut the sausage long ways and brown it. Then add it whole to soup along with any drippings from the browning process. Before serving, I take it out, cut it up and toss it back in and stir.
Add the crispy bacon bits towards the end of cooking.

Cook up some white bean chili with chicken thrown in. Shred the chicken and put back in the chili and serve with Monterrey jack cheese and jarred salsa verde. Yummo!
i would use the black beans for mexican black beans and yellow rice. . .prepare yellow rice (from international food aisle) according to package, as well as black beans. Season beans with garlic powder, cumin, cayenne pepper to taste. Top rice with black beans, and all your fave toppings – salsa, sour cream, cheese, jalepeno peppers.

I have made the white bean chili with shredded rotisserie chicken thrown in and the Black bean soup with sausage and chopped ham. I basically followed the directions on the bags 🙂 The lentil soup you made sounds really yummy, so I think I will try that next…
I like the lentil soup… and I totally agree with customizing it by adding veggies! I love adding kale to soup, and some shredded meat or chicken sausage to make it into a meal.

I would use the White Bean Chili as a base for my White Bean Chicken Chili – recipe below:
White Bean Chicken Chili
*One package Hurst White Bean Chili
*3 to 4 chicken breasts, cooked and shredded
*One onion – diced and sauteed
*1 can Rotel
*Juice from 1/2 lime
*1 t lemon pepper seasoning
*1 t chili powder
*1 t cumin
*1 t garlic powder
*1 t salt
I would prepare beans as directed, and other ingredients during the last hour of cooking.
Beans and rice are always great together.

You will need:
1 package White Bean Chili
1 cup chopped onion
1 cup diced green bell pepper
2 cloves chopped garlic
1 lb. ground chicken or turkey
Instructions:
Rinse and sort through the beans. Pour beans into a large bowl or pot and cover with 2 inches of warm water. Allow beans to soak over night, or at least 4 hours. Drain and discard water.
Add olive oil to a large soup pot over medium-high heat. Sauté the onion, pepper, and garlic for 5-6 minutes until onions become translucent. Add chicken and cook until all meat is browned.
Add 7 cups of water and rinsed beans. Turn the heat to high and bring mixture to a rolling boil. Stir periodically.
Reduce the heat to low and cover the pot. Simmer (covered) for 60 minutes.
Uncover and continue to simmer for 15 minutes.
Check beans for doneness. When fully tender, add contents of seasoning packet.
Simmer for additional 10 minutes before serving.
we use the lentil salad mix, mix it with oriental ramen noodles. mix with chopped cabbage, red onions, long beans (like green beans) and stir. a yummy meal.

we mix the black bean with yellow rice and add canned tomatoes and onions. mix with boiled/grilled chicken and add a side salad.
I’m not as good at writing recipes as Michelle is, but my favorite Hursts Beans variety is the Bayou Cajun Red Bean Soup.
I make the beans like the directions on the package, but I don’t make it into soup.
I cut up 1 or 2 onions, a few cloves of garlic and an 8 oz package of mushrooms, then saute it all in some olive oil. I also add some of whatever other veggies I have on hand: broccoli, carrots and such. After sauteing for a few minutes, I add the veggie mixture to the pot of beans. Then I add in part of the seasoning packet included with the beans. (I usually don’t use the whole packet, but I do save it to use on something else later.)
I serve this over brown rice and it is very yummy. If I have some leftover chicken I will add that as well.
p.s. sometimes I add some cooking wine when sauteing the onions and garlic.

You can make a Mexican Soup using the Hursts Black Beans
cook beans according to package directions
add the following:
2-3 cans chicken broth
1 lb ground beef, browned and drained
1 can rotel
1 can Diced Tomatoes
1 can corn
Serve with diced avocado, sour cream and crushed tortilla chips
make it vegetarian by omitting ground beef and using vegetable stock

I would have to choose the white bean chili and put it in my chicken taco chili. I love this recipe and it is even good in burritos (drain the juices) or over nacho chips for nachos (drain the juices). Of course, this all goes in the crock pot for a super easy meal.
4 breasts chicken (uncooked and thawed)
2 cans diced (or stewed tomatoes) with jalapanos and such.
1 pkg taco seasoning (optional depending on seasoning mix from hurst bag)
1 can corn – drained
1 pkg white bean chili
add all but ingredients in crock pot – adding some water depending on juice level from canned tomatoes. Cook on high for 4-6 hours or low for 6-8 hours. serve and top with nacho chip crumbs and sour cream.

My favorite variety of Hurst beans has to be the Split pea soup. Although the soup is wonderful made by the recipe on the package, I have also found that I can make it my own with a few additional ingredients. I like to add low sodium chicken stock in place of the water and add a can of french onion soup then I use either chopped up ham, bacon or smoked sausage. I have made this for a potluck and there wasn’t any left over.

Bravo Black Bean Soup
Prepare Chipotle Lime Black Bean Soup according to package directions, adding 1 chopped yellow onion, 1 chopped jalapeno pepper, 1 chopped small carrot, 1 small can tomatoes and green chilies, and 1 cup cooked chorizo sausage before simmering.
When you serve the soup, top each filled bowl with a dollop of sour cream, a sprinkling of chopped red onion, and some pickled jalapeno slices. Enjoy!

My favorite is split pea soup. Brown onion in the bottom of the pan, add chicken broth, split peas, chopped carrots. Most important is to cook slowly, stirring frequently, for many hours. Serve with fresh French bread. Yum!

My husband makes a great and easy recipe with red beans. after soaking them all night he throws them in the croc pot with some water ..rice..and some sausage. he serves it with a crusty loaf of bread….YUM
This Lemon Herb Lentil Salad sounds AMAZING!
You will need:
1 package Lemon Herb French Green Lentil Salad mix
1 Clove garlic, finely chopped
1/2 Cup diced red onion
1 Cup cherry or grape tomatoes, halved
1 Cup diced green pepper
1/2 Cup olive oil
1/2 Cup red wine vinegar
Instructions:
Sort and rinse the lentils thoroughly. Remove any debris and discard.
Add the lentils into a large soup pot and cover with 7-8 cups of water.
Turn the heat to high and bring the contents to a boil, then reduce the heat to low and simmer for 25-30 minutes, or until the lentils are completely tender.
While waiting for the lentils to cook, pour the olive oil, vinegar, and contents of seasoning packet into a large mixing bowl. Whisk together thoroughly, then add the red onion, garlic, green peppers, and tomatoes. Stir to combine.
When the lentils are finished cooking, drain completely and add them to the mixing bowl. Stir well to combine and cover the bowl with plastic wrap. Place in the fridge for at least 30 minutes before serving.

Cajun Pasta e Fagioli
1 lb. smoked or andouille sausage cut into bite-sized pieces
1 onion, chopped
1 T. oil
2 cloves garlic, minced

Tony Chacere’s Spice & Herb Seasoning
15-oz. can diced tomatoes
1 c. ditalini pasta, uncooked
7 cups of water

May add chicken bouillion cubes to flavor water
Garnish: shredded Parmesan cheese
In a large heavy soup pot over medium heat saute sausage,onion, bell pepper, celery & garlic in oil & drain. Stir in carrots cook for 4 minutes. Sprinkle with Tony Chacere’s Spice & Herbs Seasoning to taste. Stir in tomatoes with juice and water; bring to a boil & add Hurst’s bean soup. Follow directions for cooking on Hurst’s soup & add pasta 7 minutes before soup is done. May garnish individual servings with Parmesan cheese if desired. Omit the seasoning packet & use Tony’s Seasoning.
We love the black bean soup variety! I add one can of diced tomatoes, 2-3 stalks of celery-diced, one small onion – diced, and a sliced up package of turkey polska kielbasa. After cooking, I usually garnish with cilantro and sour cream. My mouth is already watering. Can’t wait until it cools down some to make it!

DIRECTIONS: In a crockpot put olive oil add onion and garlic, cook until translucent. Add turkey and brown. Add squash, broth, both tomato paste and diced tomatoes and spices. Add soaked beans and stir. Cook on HIGH for 4-6 hours, depending on prefernce. Enjoy! Great for those cold winter nights.
