Welcome to this week’s Publix Super Meals. Each week I am going to share a recipe to help you take the Publix Super Deals and turn them into Publix Super Meals!
This week I have a great recipe that is easy to throw together and also very versatile – Ham & Spinach Quiche. You can add your favorite ingredients and whip up a quiche your family will love. Take advantage of the sale items at Publix and you can have this one on the table without breaking the budget!
- 4 large eggs
- 2 cups half & half
- 1 medium onion chopped
- 4 oz mushrooms
- 6 oz spinach (more if you prefer)
- 8 oz cubed ham
- 6 oz shredded Swiss cheese
- 2 sliced tomatoes
- 1 teaspoon butter or olive oil
- 1 teaspoon pepper
- 1 pie crust (pre-made or homemade)
- Preheat oven to 400 degrees.
- Place pie crust into pie pan.
- Prick with a fork then pre-bake for 8 – 10 minutes.
- Remove pie crust from oven and allow to cool.
- Reduce oven to 375 degrees.
- Whisk eggs, pepper and half & half until combined then set aside.
- Heat butter in a skillet then saute onions and mushroom – until mushrooms are golden.
- Add in ham and cook until heated.
- Remove from pan and drain in fine mesh colander.
- Toss the spinach in the skillet and wilt.
- Drain ham, mushrooms, onions and spinach so that moisture is removed [i](drain as much as possible to avoid a soggy quiche!!)[/i]
- Allow ham and veggies to cool.
- Once cooled, place veggies in the pre-cooked pie crust.
- Cover with 4 oz of cheese.
- Pour egg mixture over veggies and cheese.
- Top with remaining cheese and sliced tomatoes.
- Bake in oven for 45 – 55 minutes or until quiche is set.
- Remove from oven and allow to cool 15 minutes before slicing.
This is a great one dish meal that your whole family will love. I actually made my boys their own individual quiches using small ramekins. You’ll have plenty of egg mixture to make a couple of extras if you need them. This lets me make sure that my little one doesn’t get any onions or mushrooms but lots of ham and that my oldest gets no onions and extra mushrooms! Perfect way to customize dinner for each person!

If you make your own crust, you can put this meal together for around $10 – $12 if you had to buy everything. I am guessing you will have many of these items in your fridge and pantry.

My family loves Quiche Lorraine and I have never tried any other quiche recipes. This sounds great and I think it will be on my list next week. One thing I have found in making quiche is that it isn’t necessary to use the cream or half and half. My recipe called for heavy cream and after doing some reading, I found that it isn’t necessary to use the more fattening stuff. My 1% works just as well and none of my boys can tell any different. Decreasing some of the fat and calories in my quiche allows me to eat a cinnamon roll with it. 🙂
