Boy it is so good to have a kitchen again. We were living out of a hotel for a couple of weeks while my house was being finished up. I tried to put together decent meals while we were in the hotel but it’s hard to do in a hotel mini kitchen!
This week I have been cooking like a mad woman and loving every minute of it.
The recipe I am sharing today is one of my recent creations. The folks at Flatout challenged me to come up with a recipe using their Foldit Artisan Flatbread. I was happy to accept the challenge–we are big fans of all their products here at my house.
I love using the Flatout Foldit to put together big, delicious, sloppy sandwiches that regular bread just can’t handle. Each Foldit has a kind of “backstop” that keeps all the filling tucked in and makes your sandwich easier to hold and easier to eat. So you know my recipe was not going to be a basic lunchmeat kind of creation. Using roasted turkey breast and veggies, I came up with a recipe that is packed with flavor. Check out my recipe for Ginger Sesame Turkey Salad On Flatout Foldit. This recipe is a wonderful dinner sandwich that becomes amazing lunch leftovers!
- Flatout Foldit Artisan Flatbread
- 2 cups roasted turkey breast, cubed
- 12 oz broccoli slaw
- 1/4 cup rice wine vinegar
- 1 tablespoon red wine vinegar
- 1/4 cup soy sauce
- 2 tablespoons lemon juice
- 2 tablespoons sesame oil
- 2 teaspoons sugar
- 1/4 teaspoon salt
- 1 garlic clove, minced
- 1 tablespoon fresh garlic, grated (or minced)
- 3/4 cup vegetable oil
- 2 tablespoons sliced almonds
- 1/4 cup rice sticks
- 1/4 cup cilantro
- green onions for garnish
- Combine vinegars, soy sauce, lemon juice, sesame oil, sugar, salt, garlic & ginger in a medium bowl.
- Gradually whisk in vegetable oil until emulsified – dressing will not be too thick. Note:You can also use an immersion blender to speed up the process.
- Place turkey, broccoli slaw into a large bowl and mix with half of dressing.
- Refrigerate until ready to serve.
- Before serving, toss turkey salad with almonds, cilantro, rice sticks and green onion.
- Spoon into Flatout Foldit (I used the Everything variety) and serve.
Now is the perfect time to whip up my recipe – Flatout Foldit is BOGO at Publix now through 9/18. You will find three delicious flavors at your store – Rosemary & Olive Oil, Everything and 5 Grain with Flax at a fantastic price. I usually grab a couple of packages of the Rosemary & Olive Oil but thought the Everything variety would be great with my turkey salad. Oh boy, I have found a new favorite! It is just delicious.
Besides being delicious, Flatout Foldit is a good choice for your family. You get half the calories and half the carbs that you’d find in two slices of 100% whole wheat bread!

The Foldits are PERFECT for paninis. I use a sandwich press and they get perfectly crispy around the edges, but the filling gets gloriously melty. I love turkey, pepper jack and avocado. The five grain with flax is my favorite thus far and a wholesome, lower-calorie alternative to traditional sandwich breads. Michelle is right about the “backstop,” too. Typically messier options like tuna stay put when you use these little bad boys!

I like the light Italian flat-out because of Weight Watchers. It’s only 2 points. Add some lunch-meat (usually only 1 point), some lettuce, onions, green peppers, and guacamole in place of mayo and a dash of red-wine vinegar and Voila! For 5 points or less (depending on the amount of guac I add), I have a great filling sandwich!

Flatout Chicken, Black Bean, & Corn Rollup
———————————————
1 package of “pre-prepared” or “shortcuts” chicken
(you can always use fresh from the meat counter chicken but my colicky
baby prefers for me to hurry it up while cooking)
1 Can of Drained and Rinsed Black Beans
1 Can of Drained Corn
Your Choice of Mexican/Taco Seasonings
(cumin, cayenne powder, and black pepper are a big hit in this house)
Salsa or Taco Sauce
———————————————
Throw the beans and corn into a large pan on medium heat and season it up with your favorite Mexican spices or just toss a packet of taco seasoning in the mix. Then add your pre-prepared chicken and cook until done. This makes a lot of yummy food so just top your favorite Flatout Foldit (my go to is the Rosemary and Olive Oil, but I may have to try the Everything variety after seeing all these compelling recipes) with as much as you like…usually as much as I can stuff in there. I finish mine off with a little salsa or taco sauce, just whatever you have on hand. If you want to make this meal go even further add some rice and you’ve got a stellar meal for the whole family with leftovers to boot!

She is actually getting to the point of telling me that I need to have “variety” in my diet. However flatouts are not going anywhere. Hehe. I was eating them on my own but now I have my husband hooked too and we have eaten them every night for probanly the past year! We have a routine about it too:
Step one: hubby washes the pan (yes we have a certain pan that we use for this process and since we don’t run the dishwasher everyday he gets to wash it! 🙂

This is an old recipe from early 80’s that a restaurant in my home town made this pita pocket sandwich from scratch and I love making it on the Flatout bread. Spread cream cheese, I now use whipped cream cheese (flavored),fresh smoked turkey, diced tomatoes, sliced avacado, red onion, green leaf lettuce and alfalfa sprouts and feta cheese, roasted red bell peppers and a little of two dressings, ranch and a homemade house that I would now compare it to a cross between, thousand and comeback. You can use, smoked ham or bacon if you like, Ive used anything I have in the fridge, but everything else is a must….This is absolutely delish!!! I call it the Trunk sandwich!!!
I love using Flatout bread to make an easy pizza crust. Just add sauce, cheese, pepperoni and mushrooms (or whatever else you like) and you have a fast, delicious meal!
I haven’t tried them yet, but all these suggestions are making me hungry! Hot ham and cheese sounds really good, but I’m thinking BLT with cheese. I always use shredded lettuce which falls out easily but the “backstop” should keep it in place. Promise if I win Flatout Foldit will be the top item on my shopping list!

Mozzarella caprese!
I am going to try the Fold-it with my favorite sandwich, tuna salad. I’m thinking that using this type if “bread” will allow me to add veggies, such as sliced cucumber and tomato, without having them fall out of the sandwich. I’m wondering how a Fold-it would taste if you tried using it for your bread when you make french toast. Some people might not think this sounds good, but I would fill it with peanut butter and bananas before making french toast.
I just wrap up a little spicy mustard, chicken breast, and lettuce for a quick, run out the door lunch!
I love a good quesadilla…Flatout wrap with colby jack cheese and a little shredded mozzarella on top. Yum!

I think a publix style veggie, with all of the fixings and white American cheese would be great!
I just recently used a flat out fold it to make chili dogs with. I ran out of buns and loaf bread, so decided to try them. It was delicious.
I’ve never tried these before but since I am in the middle of the low carb diet I am desperately longing for bread! So since you say these are low carb I am RUNNING to Publix at lunch!

I am also a pizza girl! Tomato sauce, cheese, chicken, and whatever veggies I have around + a few minutes under the broiler = a DYNAMITE and calorie conscious meal!
Great for chicken quesadillas!
I have not tried these yet, but I’d love to try the Soft Pretzel Foldit with some BBQ. They do look fantastic for a sandwich substitute – I’ve tried various wraps & they’re all been a little thin for my taste.
I would make a tuna salad sandwich!
I love using them for little pizzas, but my favorite way to use any and all FlatOut products is to make quesadillas!! I have this fantastic cast-iron grill pan, so they come out tasting fresh-grilled and delicious! 🙂

Spread on peanut butter and add sliced bananna for a nutrious snack.
Good for a Reuben sandwich – Publix deli corned beef, saukraut and thousand island dressing.
Brush with olive oil and sprinkle with finely chopped fresh rosemary and grill just for a minute or two. Using thin sliced cheese, shaved meats and sprouts or shredded lettuce, I create rolled sandwiches. I’ve also used them to make grilled pizza rolls. Use cheese, pepperoni and/or veggies then roll up (or leave flat) and grill till warmed thru. Serve with warm pizza sauce to dip in.
