One of my favorite things to eat for lunch is a Flatout Foldit with hummus and cucumbers. It’s a really simple sandwich but it’s packed with flavor and very healthy. This week I decided to kick it up a notch and added more veggies including roasted asparagus. This sandwich is a show stopper. I found myself saying “mmmm” after every single bite! The creaminess of the hummus paired with the crisp veggies, the flavorful roasted asparagus and soft Foldit is really a perfect combination!
Whip this up when you need a quick and easy lunch. This is also a fantastic dinner sandwich and a great way to get a ton of veggies in your family. This is a big monster sandwich that is perfect for the Foldout. Thanks to the “backstop” all of that yummy goodness stays tucked in with every bite!
- Flatout Foldit – [i]I used the 5 Grain Flax[/i]
- Creamy Homemade Hummus (try my recipe [url href=”http://iheartkitchen.com/creamy-homemade-hummus/” target=”_blank”]HERE[/url] – so good – oh my!)
- Cucumber, sliced
- Lettuce
- Tomato, sliced
- Carrots, julienned
- Roasted Asparagus [i](roll in olive oil & kosher salt and roast in 400 degree oven for 20 min)[/i]
- Feta
- Kalamata Olives
- Spread 1/4 cup of hummus over both sides of the Flatout Foldit.
- Stack remaining ingredients over the Flatout, fold the bread and enjoy!
I know many of us pack a lunch box each day. Why not send a peanut butter & banana sandwich on Foldit. My son love this as a change from the typical PB&J. Meat Please!
Two day’s after purchasing a pack of Flat-out Foldit they have mold all over them. The use by date is 9/15. This is the second time this has happened to us. Has anyone else had this problem?
That happened to me and I took them back to publix. They offered a refund or exchange since the sale by date wasn’t passed. I still buy them but now I keep them in the freezer. I just pop one in the microwave for 10 seconds when I want to use it and it’s perfect.
