Welcome to this week’s Publix Super Meals. Each week I am going to share a recipe to help you take the Publix Super Deals and turn them into Publix Super Meals!

When I looked at the ad this week the first thing that came to me was hot wings. I decided that was not really an option this week since wings take a fair amount of preparation and cook time. Also my boys won’t eat them so I would have had to make them a separate meal. Wings are weekend food here at my house since school nights are usually so chaotic.

Once I started thinking about hot wings I was stuck. Then I saw the pasta BOGO and knew exactly what I was going to do – Buffalo Mac & Cheese. It combines the great taste of buffalo chicken with the creamy goodness of mac and cheese.

This is an easy recipe and oh so good. It takes a few minutes to cook up the rue but then you finish it off in the oven. It will probably only take you 45 minutes from start to finish and is so worth the little bit of effort.

Buffalo Mac & Cheese

Ingredients
  • 8 oz macaroni noodles
  • 5 tablespoons butter, divided
  • 4 tablespoons flour
  • 1 cup heavy cream
  • 1 cup milk
  • 1 teaspoon salt
  • 8 oz sharp cheddar, grated
  • 1/2 pound chicken
  • 3/4 cups hot sauce -[i] I love Frank’s in this recipe[/i]
  • 1/2 – 3/4 cups panko breadcrumbs
  • 1/4 cup blue cheese crumbles
  • green onions for garnish
Instructions
[u]To Poach Chicken[/u]
  1. Bring a large pot of water to simmer.
  2. Cut each chicken breast in half, creating a large strip.
  3. Place each piece on it’s own piece of plastic wrap and add 1 -2 tablespoons of hot sauce.
  4. Roll and wrap each breast piece tightly in the wrap. Double wrap if needed.
  5. Once the water begins to simmer turn off the heat and drop in the plastic wrapped chicken.
  6. Cover the pot and allow the chicken to sit for 15 minutes (longer if using chicken more than about an inch in thickness).
  7. Remove from water and unwrap the chicken.
  8. Allow to cool then shred the chicken.
[u]Macaroni Prep[/u]
  1. Preheat oven to 400 degrees.
  2. Cook pasta according to package directions, drain and set aside.
  3. Melt 4 tablespoons of butter in large saucepan.
  4. Combine flour and salt then add to melted butter and whisk until smooth.
  5. Add milk and cream, stir constantly while cooking on medium high until mixture boils.
  6. Reduce heat to medium and continue to cook for 10 minutes while stirring constantly.
  7. Add cheddar cheese and stir until melted.
  8. Remove from heat.
  9. Add cooked noodles, cooked shredded chicken and 1/2 cup hot sauce to the cheese sauce and toss to coat.
  10. Pour into buttered casserole dish, sprinkle with buttered breadcrumbs and bake on 400 degrees for 20 minutes.
  11. Serve topped with blue cheese, additional hot sauce and sliced green onions.
Notes
[i]Be sure and cook the cheese sauce for the full 10 minutes. The rue will taste like flour if not cooked.[/i]
