Here’s the second menu item for our Publix menu plan – Turkey Sloppy Joes with Sweet Potato Fries. I told you guys that I was not only doing budget friendly meals but recipes that are super simple to prepare. Even you guys who say that you can’t cook, can make this one!
This is a delicious meal that’s also waist friendly. My mom made this quite often as I was growing up . She always used ground beef but I actually prefer the texture of the turkey in this dish. Plus you get the added benefit of fewer calories. It’s a great recipe for busy weeknights as you can have the whole meal on the table in 30 minutes.
Use this recipe as a replacement for hamburgers. A pound of meat will only yield 4 quarter pound burgers. This recipe will make 6 – 8 “burgers” giving you the option to feed more little mouths! Reducing the meat on a hamburger is very noticeable. Reducing the amount of meat via sloppy joes is completely unnoticeable! When you are looking for ways to stretch your budget, recipes like this allow you to feed more people for less money. Plus there’s no loss of flavor. Great taste without breaking the budget- that’s my kind of meal.

- 1 tablespoon vegetable oil
- 1 medium onion, chopped
- 1/2 green bell pepper, chopped
- 1 pound ground turkey
- 1 1/4 cups ketchup
- 2 teaspoons. brown sugar
- 1 1/2 tablespoons Worcestershire Sauce
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 8 hamburger buns
- Heat oil in large skillet and cook onions and bell pepper until softened (about 3 minutes).
- Add ground turkey and cook until browned, crumbling as you stir.
- Drain excess fat and then add ketchup, brown sugar, Worcestershire sauce, salt, and pepper to the pan.
- Simmer for 10 minutes until thickened.
- Serve on buns.
To make this a complete meal, whip up some Sweet Potato Fries. Preheat your oven to 450° F. Cut the sweet potato into thick even slices. Place the potato slices onto a baking pan and add 1/4 cup of olive oil, 1 teaspoon Kosher salt & 1/4 teaspoon pepper. Rub the oil/salt/pepper mixture all over fries then evenly space the potatoes on the pan. Bake at 450° F for 15 minutes. Flip the fries and cook an additional 8 – 1o minutes. Delicious!
