I have another super easy recipe for you guys today – Ham & Bean Soup.
This one is so simple because your crockpot does all the work. The hardest part is remembering to soak your beans overnight. From there you just dump everything in the pot. This is a great recipe for nights when you need dinner on the table with very little effort.
Beans are a super economical option. I always have several varieties on hand so it’s just a matter of planning ahead so you know to throw them in water before you go to bed.
This recipe is part of our Publix Menu Plan (Week Of 3/20 – 3/26). Be sure and check out the other recipes that I have shared so far this week:
- 1 pound dried Great Northern Beans
- 1 ham hock or ham bone
- 1 tablespoon salt
- 6 cups water
- 1 onion, chopped
- 1/2 cup carrots, thickly sliced
- 8 oz ham, diced
- Clean beans and cover with water. Allow to soak overnight.
- Drain and rinse beans.
- Place the beans in a slow cooker with 6 cups water, salt and ham hock.
- Cook on low for 8 hours.
- About an hour before you are ready to eat, throw in the ham, carrots and onions and increase the temperature to high.
- Allow to cook for the final hour.
- Serve with cornbread.

I love cornbread but Jiffy makes a mix (comes in a blue box) that usually runs about .60 that’s really good. Buy 2 and double up recipe for regular sized cornbread. Only have to add eggs and I can’t remember now if it’s water or milk. If you have a cast iron skillet…even better. Yummmmmmmmm!
Although I love ham, I do not like the maple or honey ham…just don’t like “sweet” tasting meat. Obviously I know I could use unflavored ham, but Publix only does BOGO on these 2. Does it affect the taste of the soup by giving it a “sweet” taste from the maple or honey? I would want a strong ham taste with no sweet.
You could try Ham seasoning in place of the actual ham. Goya makes a great seasoning that I use in my beans all the time. I usually use 2 packets for a pot of beans (1 pound) though I like a strong flavor. I hope this helps. 🙂
