Stuffed Chicken Thighs with GravyWith the great price on chicken thighs in the upcoming Publix ad, I thought I would share a super tasty meal that’s simple to put together – Stuffed Chicken Thighs with Gravy.

I originally came up with this recipe when I needed to cook up big boneless turkey breast. I don’t often have turkey on hand…I loved the taste so I started doing the recipe with chicken.

While you can do this recipe with chicken breast, I highly recommend you try it with chicken thighs. They cook up so juicy and tender and the addition of the gravy makes this a scrumptious dinner!

You can use any bread that you have on hand. I diced up some of the leftover hamburger buns that I had made over the weekend. This recipe is great to put any stale bread to use.

Stuffed Chicken Thighs with Gravy

Ingredients
  • 4 chicken thighs (boneless, skinless)
  • 3 cups bread, cubed
  • 1 medium onion, chopped
  • 1 apple, chopped
  • 1 egg, beaten
  • 4 tablespoons butter
  • 4 tablespoons flour
  • 3 cups chicken broth
  • 1 teaspoon salt, divided
  • 1/2 teaspoon pepper
  • 1/4 teaspoon rubbed sage
  • 1/4 teaspoon poultry seasoning
Instructions
  1. Preheat oven to 375º F.
  2. Remove skin and bone from each chicken thigh and pound to flatten slightly.
  3. Melt butter in a medium skillet and saute onion and apples until softened.
  4. Remove from heat and add bread cubes, egg, sage, poultry seasoning, 1/2 teaspoon salt and 1/4 teaspoon of pepper.
  5. Slowly add in [b]up to [/b]1 cup of chicken broth and mix well. Note: you may not need the full cup. The stuffing should be moist but still hold together.
  6. Divide the stuffing and heap onto the center of each chicken thigh.   7. Gently fold the chicken around the stuffing and place in a baking dish.
  8. Sprinkle with salt and pepper and bake in 375º oven for 25 minutes or until chicken is done.
  9. About 10 minutes before chicken is done make the gravy by melting 3 tablespoons of butter in a skillet.
  10. Whisk in the flour and cook for 1 minute over medium high heat.
  11. Add 2 cups of chicken broth, 1/2 teaspoon salt and 1/4 teaspoon of pepper and whisk until combined.
  12. Cook and stir over medium for 3 -5 minutes until the gravy is thickened.
  13. Serve the gravy over the cooked chicken.

This one is under $9 and you’ll have a ton of chicken. Divide up the package and freeze some for later!
