Ok so this is not the prettiest recipe ever, but it’s quick, easy, and family friendly. This is actually a recipe that my husband’s mom made for him when he was younger. I will admit that it’s not a recipe that I would typically make – but my husband and the boys love it so I throw it together every now and again.
This recipe for Mexican Casserole will feed a large crew without breaking the budget.
Now, the casserole actually tastes pretty good…I just had a hard time getting past the ingredient combination. You can make this one with ground beef, ground turkey or even shredded chicken. I have made it with them all and it’s pretty good with any of the proteins. The recipe I have calls for Doritos but I personally like this one better with plain tortilla chips.
As you can see there are various combinations. Pick your favorite and whip this up at a nice price.
This meal is part of the Publix Menu Plan For the Week Of 5/15 – 5/21 (5/14 to 5/20 for some). Here are the other recipes I have shared this week:
- 1 1/2 pound ground beef or turkey (or 2 cups shredded chicken)
- 1 medium onion, chopped
- 1 can cream of chicken soup
- 1 can cream of mushroom soup
- 1 can enchilada sauce
- 1 6 oz can tomato sauce
- 1 10 oz bag Doritos (or tortilla chips)
- 1 cup cheese, shredded
- Preheat oven to 350º F.
- Cook beef and onion in a large skillet over medium heat.
- Break up meat while you stir and cook until meat is browned.
- Add the two cans of soups, tomato sauce and enchilada sauce and stir until combined.
- Place the chips in the bottom of a large casserole dish and pour the meat mixture over the chips.
- If desired you can reserve a few chips for the top of the casserole.
- Sprinkle with cheese and cook in a 350º F oven for 10 minutes until heated through.
If you had to buy everything this one would only cost you about $2 per person!

Question: The photo shows tomato sauce and the ingredients lists enchilada sauce twice but the directions don’t say when to add the tomato sauce or the second enchilada sauce. Could you please clarify? Thanks!
Sorry about that –it is a small can of tomato sauce…I just duplicated enchilada by accident.
