Spud Dogs-Today I have a recipe that may bring some of you guys back to your childhood. Surely, I wasn’t the only kid who ate these mashed potato stuffed hot dogs? Some of you might have even had flying saucers  too…you know a scoop of mashed potatoes on a slice of fried bologna with cheese melted on top. Please tell me I am not the only one who ate those crazy foods as a kid?

My mom is a great cook but when I was growing up money was very, very tight so creativity with food was sometimes necessary. Instead of boring old hot dogs, these stuffed dogs were a fun change of pace.

I make them every once in a while for my boys. While they like them with just the potatoes, I like to doctor them up a bit by adding cheese, onions and a little bacon. You can also use sausage links if you prefer. While not exactly gourmet, these are super quick to throw together and very easy on the budget! When you need a meal on the cheap that will add a little whimsy to dinner, whip up some Spud Dogs.

Add in some zucchini chips and steamed carrots for a great meal on the cheap. This recipe is part of the Publix Menu – Week of 6/12.  Here are the other recipes that I have already shared –

Ingredients
  • 1 1/2 cups mashed potatoes (basic cooked potatoes whipped with milk and butter)
  • 6 – 8 beef franks
  • cheese, shredded
  • green onion, sliced
  • bacon, cooked & crumbled
Instructions
  1. Preheat oven to 400º F.
  2. Slice the beef frank down the length of the dog (without cutting through)[url href=”https://www.iheartpublix.com/wp-content/uploads/2014/06/diggity-dog-2.jpg”][img src=”https://www.iheartpublix.com/wp-content/uploads/2014/06/diggity-dog-2.jpg” width=”400″ height=”287″ class=”aligncenter size-full” title=”diggity-dog”][/url]
  3. Pipe or spoon the prepared mashed potatoes down the center of the cut frank.
  4. Place on an un-greased cooking sheet and bake for 8 – 10 minutes.
  5. If desired, you can top with shredded cheese, bacon crumbles and green onion.
