Laurie over at Passionate Penny Pincher sent over her recipes for the week. She has several good ones for us. My husband loves pork stuffed potatoes. There is a restaurant that we have been to a few times that has one called the pig in the potato patch where you get pork on top of a massive potato!
I plan on buying a couple of Boston Butt Roasts so I may have to put that on the menu for next week.

My Hubby loves pork stuffed potatoes!!!! That is his favorite at any BBQ place. I have also adapted the pulled pork/potato recipe to top mashed potatoes. Same idea just put everything on top of a plate of mashed potatoes.
I will do that for the boys…they will love it!!

I love those potatoes too! I get them at a local restaurant called “The Briar Patch” and also at Smokey Bones. (using their great $10/20 printable coupons of course! lol) I’ve even made them at home before, also, and they are a BIG hit! I can’t wait to try this recipe. I’ve already printed it out and have all the ingredients on hand, including a massive Boston Butt roast in the freezer. 😀
I made this stuffed potato and BOY is it good! My husband says it’s one of his new favorite dinners. It’s also good with a little splash of BBQ or hot sauce on top.
