Nothing was jumping out at me in this week’s ad so I decided to share a recipe that I can whip up just about any time – Easy Meatloaf Cupcakes. I always have lean ground beef in my fridge. Add in a few potatoes and some pantry staples and voila – a fun and delicious meal the whole family will love.
There is nothing fancy about this recipe. You can use your favorite meatloaf recipe and just bake it in a cupcake tin. The fun happens with a simple pastry bag and decorating tip. If you don’t have a pastry bag you could also just pop the potatoes in a plastic bag and snip the corner and then pipe the potatoes – easy breezy. A few green onions and crumbled bacon add a fun sprinkle effect to your cupcakes.
You really only add about 5 minutes to a standard meatloaf and potatoes meal. Why not take those few minutes to make dinner a fun experience for everyone.
By the way –wondering how to get super creamy mashed potatoes? I used to pull out my big KitchenAid mixer but for the past 10ish years I have used my handy dandy potato ricer. It is the best thing on earth for smooth mashed potatoes!!
- 1.5 pounds lean ground beef
- 1 cup bread crumbs – I use Panko Breadcrumbs
- 1/2 cup milk
- 2 eggs
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 carrot, finely shredded
- 1/2 teaspoon salt
- 1/2 teaspoon oregano
- 1/4 teaspoon pepper
- 1/2 cup ketchup
- 2 tablespoons brown sugar
- 1 tablespoon mustard
- 2 cups mashed potatoes*
- Preheat oven to 350 degrees.
- In a large bowl, combine the beef, breadcrumbs, milk, eggs, onion, garlic, carrot, salt, oregano, and pepper – mix well.
- Divide evenly and roll into 16 large meatballs.
- Lightly spray muffin tins with non-stick spray and press each meatball into the pan.
- Add the ketchup, mustard and brown sugar to a small bowl and whisk until combined.
- Top each mini meatloaf with a dollop of sauce and bake in a 350 degree oven for about 25 minutes or until cooked through.
- Allow to cool for 3 – 5 minutes before piping mashed potatoes onto the mini meatloaf – [i]I like to use a pastry bag with a 2A tip.[/i]
- Top each “cupcake” with crumbled bacon and sliced green onion for a sprinkles effect.

I make meatloaf cupcakes all the time! My three kiddos (ages 3, 6 and 9) actually get excited when we have them for a meal! So much fun! I use corn for our “sprinkles.” 🙂
Just wanted to double check – 16 balls? My muffin tins only hold 12, so didn’t know if it should be 12… I guess I would just make them bigger balls and cook them a tad longer.
i use one big 12 ct pan and a small 6 count pan 🙂
