As you can imagine, I spend a good chunk of time online. One of my favorite things to do is peruse Pinterest and various sites looking at their food pictures. They are such a great source of inspiration…especially for those of us who may not be super creative!
I am usually baking something at least once each week. Whether it’s for my crew, a school function, a friend in need or just for the fun of it. This week I decided to bake up a cake to take to my brand new neighbors to welcome them to their new home. They have been working on their home for quite a while as they decided to build it themselves! They finally moved in so I thought it would be a good time to stop by and congratulate them.
I am always drawn to flavors that I love so when I saw the recipe for the Buttercream-Frosted Lemon Blueberry Layer Cake, I just knew it would be perfect for them! I mean who can turn down the combination of blueberries and lemon? Of course it was also super helpful that we have that fabulous BOGO sale running right now on the Pillsbury Purely Simple Mixes! Paired with the sale on the frosting, I was able to whip up the cake at a fabulous price!

I definitely wanted to take advantage of the sale. We had the chance to try the Purely Simple™ mixes and frosting a while back when they were introduced and loved everything about them. The taste is fantastic in every single product and they contain no colors, preservatives, or artificial flavors so you get a homemade taste that’s simply delicious.
When it came time to decorate the cake, I decided to try to make it look like the cake from the Pillsbury website. Now of course I am not a professional photographer but I was pretty pleased with how it turned out. It really didn’t take me but maybe 3 – 5 minutes more than it would have taken if I would have just made the basic boxed cake. But I think the presentation is just so much more beautiful. I KNOW the taste is going to be fantastic. You can’t see it but there are tons of fresh blueberries hiding inside the layers of the cake. Maybe if I am lucky, my neighbors will offer to cut the cake tonight when I deliver it to them and I will get a bite of it before I leave. If not, I might just be baking up another cake this weekend as my mouth has been watering just looking at it all afternoon!
I guess my point is that you should take advantage of the product websites and those recipes you find on the box. Don’t be afraid to go beyond the basic instructions – I think you might just find that the tiny extra effort is more than worth it!
- Crisco® Original No-Stick Cooking Spray
- 1 pkg. Pillsbury™ Purely Simple™ White Cake & Cupcake Mix
- Additional ingredients to prepare cake mix per package instructions
- 4 tsps. lemon juice, divided
- 3 tsps. finely grated lemon peel, divided
- 2 cups fresh blueberries, plus additional for garnish
- 1 (8 oz.) pkg. cream cheese, softened
- 1 container Pillsbury™ Creamy Supreme® Vanilla Flavored Frosting
- HEAT oven to 350°F. Coat 3 (8 or 9-inch) round cake pans with no-stick cooking spray. Dust with flour.
- PREPARE cake mix batter according to package instructions using butter, milk and eggs. Blend in 1 tablespoon lemon juice and 2 teaspoons lemon peel. Divide evenly into prepared pans. Sprinkle evenly with blueberries.
- BAKE 20 to 23 minutes or until toothpick inserted in center comes out clean. Cool in pans 10 minutes. Remove from pans to wire rack to cool completely.
- BEAT cream cheese, 1 teaspoon lemon peel and 1 teaspoon lemon juice in large bowl with mixer on high speed until fluffy. Blend in frosting until smooth. Stack cake layers, blueberry side up, spreading frosting mixture between layers. Spread remaining frosting on top and sides of cake. Chill at least 1 hour to set frosting. Garnish as desired.

Just made a Lemon blueberry layer cake two weeks ago! It was a new recipe and worked out great. I used a lemon cream cheese frosting with it – delish!!
