I eat a lot of salads each week. Usually I am just looking for something quick and easy to throw together midday that doesn’t require any cooking. A salad is the easiest option since I can have it together in no time flat.

Of course I have about a million different salad combinations that I can whip up. One of my all time favorite ways to eat a salad is on a sandwich. I know—it’s not your standard way to eat a salad but once you give it a try you won’t care if it’s called a salad or a sandwich…you’ll just call it DELICIOUS!

Now lots of people turn up their noses at a salad but I say those people just don’t know how to make a GOOD salad!  Often people just throw some bagged lettuce in a bowl and toss with dressing. I’ll admit…there is nothing good about that kind of salad. With just a little more effort you can have a delicious meal that will convert any salad hater and make them a salad lover!

A chopped salad is what I always recommend to folks who complain about salads. Big chunks of lettuce leaves and toppings in a salad just doesn’t work. Not only is it hard to eat but you don’t get the right ratio of ingredients and dressing. A chopped salad offers great taste in every single bite. You get a mixture of all those tasty ingredients every time!

Plus chopped salads are incredibly simple. You literally throw all the ingredients onto a chopping board, grab a handy knife and chop away. The goal is to get all ingredients cut into uniform, bite sized pieces. That way every single ingredient is in each bite and the dressing coats everything evenly…no more dry lettuce leaves!

Italian Chopped Salad Sandwich

Ingredients
  • Flatout 5 Grain Flax
  • 1 cup Romaine Lettuce
  • 1/2 cup Shredded cabbage (or coleslaw mix)
  • 1 tablespoon Red onion
  • 1 tablespoon Cucumber
  • 1 tablespoon Feta cheese
  • 1 tablespoon Kalamata olives
  • 2 oz Deli meat – [i]salami, capicola, prosciutto, ham…whatever you like[/i]
  • 2 tablespoons Italian dressing
Instructions
  1. Pile all ingredients (except dressing) on a chopping board.
  2. Chop everything until all ingredients are small bite sized pieces.
  3. Toss with the dressing and serve piled on Flatout 5 Grain Flax Flatbread.
