We are about to hit a super busy time of year. The kids are headed back to school in a few weeks, and soon we’ll have to adjust to a new schedule. I try to simplify my week with a combination of cooking ahead and planning meals that allow me to cook once but  eat twice. It takes a little planning but it helps me survive a stressful week without a ton of effort. The key is being prepared.  I’ll often prep meals and cook ahead on Sunday.
