- 1 lb pasta, penne
- 2 tablespoons olive oil
- 1 medium onion, chopped
- 3 garlic cloves, minced
- ½ teaspoon dried oregano
- ½ teaspoon red pepper flakes
- ½ teaspoon black pepper
- ½ teaspoon sea salt
- 1 (28 oz) can tomatoes, whole
- 2 cups (8 oz) Tillamook Sharp Cheddar Cheese, shredded
- 1 large tomato, cut into ¼” slices
- 10 fresh basil leaves, chopped
- Preheat oven to 375°F. Lightly oil a 9”x13” baking pan.
- Cook pasta according to package directions, rinse well under cool water, drain and set aside.
- In a large skillet heat oil over medium heat. Add onion and cook until softened, about 5 minutes. Add garlic, dried oregano, red pepper flakes, pepper, and salt and cook 1 minute more.
- Add tomatoes and crush with the back of a spoon. Bring sauce to a simmer and cook until slightly thickened, about 8 minutes.
- In a large bowl, toss pasta with tomato sauce and half of each cheese, then transfer to baking pan. Top with tomato slices, remaining cheese halves and bake until cheese is melted and bubbly, about 20 minutes.
- Top with fresh basil.
