Greek Salad
Ingredients
1 hothouse cucumber, unpeeled, seeded, and sliced 1/4-inch thick
1 red bell pepper, large-diced
1 yellow bell pepper, large-diced
1 pint cherry or grape tomatoes, halved
1/2 red onion, sliced in half-rounds
1/2 pound feta cheese, 1/2-inch diced (not crumbled)
1/2 cup calamata olives, pitted
For the vinaigrette:
2 cloves garlic, minced
1 teaspoon dried oregano
1/2 teaspoon Dijon mustard
1/4 cup good red wine vinegar
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1/2 cup good olive oil Carapelli Organic Extra Virgin Olive Oil
Place the cucumber, peppers, tomatoes and red onion in a large bowl.
For the vinaigrette, whisk together the garlic, oregano, mustard, vinegar, salt and pepper in a small bowl. Still whisking, slowly add the olive oil to make an emulsion. Pour the vinaigrette over the vegetables. Add the feta and olives and toss lightly. Set aside for 30 minutes to allow the flavors to blend. Serve at room temperature.
My favorite meal with olive oil is an easy one. I love olive oil over tortellini with parmesan cheese.

I use olive oil a lot. . I love to make carmelised onions, I drizzle olive oil on lightly steamed veggies, stuff like that
I love to roast asparagus in olive oil. Fresh Asparagus, Olive Oil, Salt, Pepper. 450 degrees 10-20 minutes depending on thickness of asparagus.

Sauteed peppers and onions with a vegetarian meat in whole wheat pita. Side salad with the olive oil base dressing. YUM!
I love Carapelli Organic Olive oil! I use it on salads all the time. My favorite salad is:
1 small red onion chopped
2 Hass or 1 large Florida avocado chopped into cubes
1 large tomato chopped into cubes
2 1/2 Tablespoons Carapelli Organic oil
1 1/4 Tablespoon vinegar
salt and pepper to taste
Stir all gently and use as a side salad or side relish

Homemade pasta sauce!
I USE OLIVE OIL FOR EVERYTHING, FROM ADDING A LITTLE TO SPAGHETTI TO KEEP IT FROM STICKING TO ROASTING VEGETABLES.
I like to mix it in with pasta and salad.
Olive oil for homemade pasta, scratch marinara sauce and garlic bread with dipping oil.
Breakfast egggs also get cooked with a bit of olive oil in our house.
I use olive oil in many recipes but the easiest is my salmon recipe.
1. Salt and pepper salmon filet.
2. Cover with thinly sliced onion.
3. Sprinkle with parsley.
4. Cover with freshly cut tomatoes.
5. Put 3 kalamata olives on each filet.
6. Sprinkle with Italian seasoning.
7. Drizzle with white wine.
8. Drizzle with olive oil.
Bake for 12 minutes at 500.
fast and delicious.
My favorite side salad: You can also use it as a side relish dish
1 large organic tomato

I use olive oil in all my cooking. It even works as a moisturizer for dry skin! Really – try it on your elbows.
I use this to make a nice hearty meat sauce and also for caprese salad.
I use olive oil on toast, in pastas, in salads and very good on sliced avocado. Olive oil is very good for you.
Grilled Steak with Olive Oil Charred Scallions
2 lbs. flank steak or hanger steak
kosher salt
ground black pepper
2 bunches scallions
1 Tbsp. + 1 tsp. Carapelli Organic Extra Virgin Olive Oil, divided
flaky sea salt, such as Maldon
DIRECTIONS:
Generously sprinkle the steaks with kosher salt and black pepper and set aside.
Rinse the scallions and pat dry. Trim off any wilted ends and thin onion skin.
Preheat grill for medium-high direct heat. Pour 1 Tbsp. of Carapelli Organic Extra Virgin Olive Oil on a thick, folded piece of paper towel and carefully wipe the hot grill grates, holding the paper towel with tongs for safety.
Place the steaks on the grill and cook for about 5 minutes per side, flipping once or twice, until a thermometer inserted into the thickest part of the steak registers 140º F for medium-rare.
Let the steaks rest while the scallions cook. Toss the scallions with the remaining 1 tsp. of olive oil and sprinkle with salt and pepper. Place in a perforated grill pan or crosswise on the grill grates and cook just until charred in spots, about 3–4 minutes.
To serve, slice the steaks against the grain into 1-inch thick pieces. Arrange on a platter with the scallions. Drizzle with olive oil and sprinkle with flaky sea salt.
Alternatively, preheat a grill pan or large cast iron skillet over high heat for at least 5 minutes. Prep with olive oil and cook the steak and scallions as directed above.

1 large clove of garlic either pressed or chopped fine
1 tsp dried Oregano
1/2 tsp kosher salt

With a great quality olive oil like the Carapelli, I like to use as a dip for freshly baked bread! in a dipping bowl mix in some spices and go for it!
A little garlic sauteed in olive oil and tossed with pasta then topped with parmesan cheese is delicious.

GRILLED STEAK WITH OLIVE OIL CHARRED SCALLIONS
Olive oil is a key ingredient in pesto which I make with basil leaves, garlic, pecans, and parmesan cheese.
Olive Oil is always on hand at our house, from roasted veggies to salads and pasta….,,our bottle sits right near the stove.
My fave recipe is so simple and fast, I make it constantly as a side dish and to take in my lunch to work. I eyeball it, and pour olive oil in a big glass bowl, then add in some balsamic vinegar, probably 1 part vinegar to 10 parts oil, then I liberally add in dried oregano and dried dill, a little dried parsley, some Celtic Sea Salt, black pepper and whisk them together. I rinse a couple cans of garbonzo beans and add them to the dressing, then I halve 2 cans of either RIPE green or black olives, halve or quarter a bit less than a pint of grape tomatoes, then add in either shredded or grated parm, or shredded mozzarella, or feta chunks and it’s done!
We like to make our own sauces and homemade pizza and of course we do a lot of sauteed items so the Carapelli is on hand. I usually stock up when there is a good sale.

I like to keep it simple and simply delicious, like aglio e olio.
7 large garlic cloves, peeled
½ cup Carapelli EVOO
Pinch of Salt, Ground Black Pepper and Crushed Red Pepper Flakes
1/4 cup minced fresh parsley leaves
1 – Place oil, garlic, and 1/2 tsp salt in small skillet. Turn heat to medium-low and cook, stirring often, until garlic becomes a rich, golden color, about 5 minutes. Do not let garlic brown.
2 – Remove skillet from heat. Stir in parsley, and peppers to taste. Cook your favorite pasta, reserving 1/4 cup pasta cooking water to use as needed to moisten sauce.

One of my favorite and quickest pasta sauces is aglio e olio (Pasta in Garlic and Oil Sauce). The recipe uses Carapelli extra-virgin olive oil, fresh minced garlic and red pepper flakes (optional to spice it up) over pasta. I like using Angel Hair with this sauce. It sounds too simple but it’s so good! You can also add a splash of lemon juice and/or freshly-ground pepper and/or parmesan cheese to taste. For a fuller meal, top the pasta with shrimp, chicken or meatballs. And don’t forget the garlic bread! Delizioso!
I love Carapelli Olive Oil. I use Olive oil for any boiled veggie.
I use Carapelli EVOO to make a quick pasta sauce with anchovies, garlic, and EVOO. Add some EVOO to a pan, cook the garlic until soft, add anchovies, saute, serve. It is done in less than 5 minutes. I serve the sauce over angel hair pasta.

My favorite recipe that calls for olive oil is carne asada. It’s not italian but it is definitely delicious! You season the meat by marinating skirt steak in olive oil, lime juice, minced garlic, chopped basil, soy sauce, black pepper, and chopped scallions for about three hours, then grill.

1 shallot, finely chopped
1 chile or red jalapeño pepper, finely chopped

¼ cup finely chopped flat-leaf parsley
2 Tbsp. finely chopped oregano
¾ cup extra-virgin OLIVE OIL

Greek Chicken Marinade
1/2 cup EVOO
3 cloves garlic
1/2 tbs dried basil
1/2 tbs dried rosemary
1 tsp salt
1/2 tsp black pepper
Marinade chicken for at least 4 hours or overnight. Then cook on the grill!
We also love to serve it with a Caprese salad and drizzle some EVOO over the top.
I spray it on food I’m going to cook in the air fryer and also when cooking squash and zucchini.

With my husband being Italian, Carapelli Olive Oil is a staple in our family for years. From appetizers, salads to Italian dinners-pastas, beef, fish… It is always in our hand in the kitchen making a delicious, hearty Italian meal. Too many meals and recipes to mention !! 🙂
We use EVOO in just about everything we cook. Even the home made dog food get EVOO. I put it on my cuticles at night. EVOO is a must in my house!
This is one I like to make:
Roasted squash and zucchini
2 small squash cut into ½ inch slices
1 small zucchini cut into ½ inch slices
½ an onion, sliced
2 cloves garlic, minced
Salt and pepper
2 T to 3 T olive oil
½ cup Parmesan cheese
Add some oil to the bottom of a baking dish.
Combine all the veggies and place them in the dish.
Sprinkle with salt and pepper and drizzle additional olive oil on the top. Add the Parmesan cheese to the top and bake 25 minutes in a 400 degree oven.
Shrimp Scampi over pasta. Fabulous with Carapelli Organic Extra Virgin Olive Oil.

Making Chicken Piccata is my favorite way to use Carapelli EVOO. It is one of my families favorite dishes so I especially enjoy making it for them!
I use EVOO to coat root vegetables before i bake them. Choose any root veggies of your choice, cut into bite size pieces, sprinkle with salt, thyme, oregano, sweet marjoram, black pepper, smoked paprika, and pepper flakes (optional). Then drizzle with EVOO and mix well. Bake until veggies are fork tender. DELICIOUS!!!

Chicken with artichokes in olive oil
Caprese salad with tomatoes, mozzarella, fresh basil and Carapelli EVOO
Preheat oven to 400 degrees
Place halfed Brussels sprouts, EVOO, garlic salt, and pepper in a large resealable plastic bag. Seal tightly, and shake to coat. Place onto baking sheet, squeeze 1 lemon over the sprouts.
Roast in the preheated oven for 30 to 45 minutes, Shake pan halfway through baking for even browning.
Making lasagna! This is great!!
My son is an aspiring chef…and he’s only 9! So to encourage him, every Sunday he’s in charge of making whatever he wants in the kitchen, his little sister right there by his side to help. She’s 8! Well, last weekend, we created something the kids have named Yum-Goo. Granted, we weren’t allowed to name it until after it was done and we tasted it, so Yum…really fit. The recipe was simple and yet so tasty. We pour some Carapelli Extra Virgin Olive Oil in a pan with some smashed fresh garlic, let that brown before adding fresh diced tomatoes, tomato paste, salsa and a few squeezes of crema. Let simmer. While that’s getting hot, you prep 1 pack of chicken legs, though please use the piece of your choice! Season with chicken seasoning, pepper, salt, and line them in a deep baking dish. Once the sauce is simmered, heavily pour over the chicken, making sure to turn and flip them to cover them completely. Stick them in a 400 degree heated oven and bake for 45 mins to an hour. As a side, you can pair with yellow or white rice and black beans. We went yellow rice! Pile some on your plate and top with 2 pieces of the chicken, making sure to get some extra sauce from the pan right on that mountain of yum you just made. And if you want, why not hit the finished product with another dash of Carapelli Extra Virgin Olive Oil! It was amazingly delicious, and we plan to make it again…and again. HE’S 9!

I make my own dressings on a weekly basis so I go through a lot of olive oil.
My fave meal using organic olive oil is a combination butter and romaine lettuce salad bowl, with sliced avocado, slices apples, minced red onion, finely grated red cabbage, dried organic cranberries, and grilled organic chicken tenders- basted in the olive oil and your fave spices- gently grilled until finished, then sliced thin and placed on salad. Next combine your fave organic balsamic glaze and the olive oil and drizzle on your salad bowl. TOTAL yumm!
I drizzle olive oil, salt and pepper, and grated parmesan cheese over tomato slices. I bake on a low temperature, until the cheese is slightly melted. Delicious!

I Love CARAPELLI Organic Extra Virgin olive Oil ! I drizzle it on a plate of Italian meat appetizers, Caprese salad, Romain lettuce tossed salad, croutons, garlic bread, boiling water when I make pasta, homemade tomato sauce, and of course when I cook the entrees of meats, fish, and poultry too.
I use Extra Virgin Olive Oil to make homemade salad dressing, to saute fresh vegetables and saute fresh skin-on wild salmon. I even add some to coconut-oil to pre-condition my hair!

I make my own pizza, and just before I stick it into the oven, I drizzle about 2 tablespoons of olive oil over the top. It’s the crown jewel that makes it taste authentic!

I just used the carapelli extra virgin olive oil last night to make steak fajitas with! I fried the steak , onions, and peppers in a generous amount of the olive oil. It was awesome! Anything I make with this olive oil is wonderful!
