I don’t know about you but I love recipes that don’t take a lot of effort or a lot of ingredients to yield great taste. My Sausage & Potato Tart is that kind of recipe and is fantastic as an easy weeknight meal.
You only need a couple of ingredients, the main one being a pack of delicious Eckrich Smoked Sausage. Paired with the potatoes, cheese and pastry dough you have an amazing meal that’s an awesome change of pace from a dinner pie or pizza!
My guys love this meal but now they are eating big portions and I fear that soon I’ll have to make two to satisfy their big appetites!
- 7 ounces of Eckrich Smoked Sausage, cut into 1/8″ slices
- 1 puff pastry sheet, thawed according to package instructions
- 1/4 cup parmesan cheese, shredded
- 4 oz mozzarella cheese, shedded
- 3 – 4 small new potatoes sliced extremely thin [i]- a mandolin works great for this![/i]
- fresh parsley
- ground black pepper
- Preheat oven to 400º F.
- Unfold the puff pastry on a piece of parchment paper
- Roll out the puff pastry sheet to a 16″ square
- Sprinkle half the mozzarella and half of the parmesan over the pastry.
- Top with alternating layers of sliced Eckrich Sausage and potatoes to cover the top of the pastry.
- Sprinkle with remaining cheese, about 1 teaspoon of chopped fresh parsley and black pepper.
- Bake for 20 – 25 minutes or until pastry is golden and cheese is bubbly.
- Top with additional fresh parsley and serve warm.

That looks really good, and with few ingredients, a real time saver. Thanks for sharing. I like to use the sausage to do a quick sausage, peppers and onions stir fry. I serve it over stir fried riced cauliflower. Another quick and easy favorite.
This was a hit for my family of 5 hearty pickey eaters. I made two pastry sheets (dobled he ingrediants). Surprissingly very filling.
