I told you guys that I was making a few changes here on the site. I sent a questionnaire out to a bunch of folks asking for suggestions and things they’d like to see change, improve or add to the current lineup of features here on iHeartPublix.
One request that kept popping up was for meal ideas/recipes to go with the weekly ad.
Meal planning can be a pain but it’s probably the number one way to save money. So I get it…having easy and inexpensive meals really can make life easier. I cook almost every night and am ALWAYS looking for new recipes and options to keep my weekly grocery budget as low as possible.
So, I am going to do my best to come up with at least one recipe or meal suggestion to go with the ad each week. Chances are it will be something that I am making anyway—so I just have to remember to snap a picture and type up the recipe for you guys.
Once the redesign is live, recipes should be easier to find. I am also going to try to share applicable recipes in posts where the ingredients are on sale.
- 24 oz shrimp, peeled & deveined
- 6 tablespoons butter, melted
- 1/2 teaspoon salt
- 1/4 teaspoon red pepper flakes
- 2 cloves garlic, minced
- 1 tablespoon shallot, minced
- 1 tablespoon fresh parsley, chopped
- 1 heaping tablespoon dijon mustard
- 1/2 fresh lemon, juiced (about 1 to 1 1/2 tablespoons)
- 12 oz angel hair pasta, cooked
- parsley and lemon for serving
- Preheat oven to 425ºF
- To the melted butter, add the salt, red pepper flakes, garlic, shallot, parsley, dijon mustard and lemon juice – whisk to combine.
- Place the shrimp in a shallow baking dish.
- Add the butter mixture to the shrimp and stir to coat.
- Bake for 12 – 15 minutes until the shrimp are pink and opaque.
- Add the cooked shrimp and sauce to the cooked pasta and toss to combine.
- Serve with additional parsley and lemon if desired.
With Publix shrimp on sale buy one, get one free this week, I knew what recipe to share! One of my family’s absolute favorite meals is this Easy Baked Shrimp Scampi recipe. It’s super easy, fast and can be customized. Sometimes I add peas, broccoli or spinach just to give it some color.
With the sale items and a few pantry staples, you should be able to put this one on the table for $10 – $12 TOTAL!
