Knowing that things would probably be a bit hectic, I planned ahead and had super simple meals set up for this entire week. I put three slow cooker meals on my menu as a way to prepare for any hiccups. Hey, this isn’t my first rodeo, so I know to expect the unexpected the first couple of weeks.
I don’t have a ton of extra time to deal with dinner so, having those easy meal planned have dramatically reduced my stress level. And since all the recipes that I picked are crazy good, dinnertime has been wonderful this week. I haven’t had to work hard and my guys are all super happy…that’s a great combo in my world!
I am betting that many of you are in the same boat as me right now, so I thought I’d share a simple but delicious recipe to help make your mealtime a breeze. My Cuban Quesadillas are the ultimate busy weeknight meal that tastes amazing and is super simple to prepare.
Just pop some Smithfield Marinated Fresh Pork in your slow cooker in the morning, Then when dinnertime rolls around, you have tasty meat that becomes the base of your quesadilla. Then it’s just a matter of filling the tortilla and grilling it up for a melty, incredibly easy and oh, so flavorful meal that your entire family will devour!
Throwing the pork in the slow cooker will take you about 2 minutes and making the quesadilla maybe 10 – 15. So, your total time spent is maybe 20 minutes total. Heck, pull out the paper plates and you’ll only have your slow cooker and a pan/panini press to wash when you are done. Easy prep and easy cleanup…this recipe is definitely a winner!
Even better is that this meal is also super economical. You only need six ingredients AND there are coupons or sales on almost all of them right now at Publix.

Visit the meat department at Publix and grab some Smithfield Marinated Pork and a few additional items and add my Cuban Quesadillas to your menu this week. You’ll love the taste and the fact that dinner is quick and easy!
- Smithfield Garlic & Herb Pork Sirloin
- 1/2 cup water
- 8 oz Smithfield Chopped Ham
- 1 cup shredded Swiss cheese
- 4 tablespoons yellow mustard
- 1/4 cup sliced dill pickles (or to taste)
- 6 flour tortillas (8 – 10″ works best)
- Place the Smithfield Garlic & Herb Pork Sirloin in the slow cooker with 1/2 cup water. Cover and cook on low for 8 hours. Once cooked, shred the pork and set aside.
- Spread 2 teaspoons of mustard on one side of each tortilla.
- Evenly divide the shredded pork, ham, pickles and cheese and place on half of each tortilla.
- Fold the other half of the tortilla over to cover the filling.
- Place the filled tortilla on a panini press and cook for 3 – 5 minutes until golden and the cheese has melted.[i] * See notes to cook in skillet.[/i]
