Ok…I will admit it—I am a Mexican food addict. I would be more than happy to eat some kind of Mexican dish every single day of my life. Of course I can’t go out to my favorite Mexican restaurant every night, so I have learned to recreate the foods that I love at home!
One of my absolute favorite things to eat is queso dip. Whether it’s with chips, stuffed in peppers, poured all over nachos or a burrito, that creamy goodness just can’t be beat.
With football season in full swing, queso dip is a frequent addition to my party spread.
Of course when we have folks over for game day, it’s usually a FULL day of fun. Games typically start up around noon and can run late into the evening. I have to have lots of food on hand to feed folks all day long! That’s when I pull out my slow cookers.
One of the most popular game day menus that I serve is my carnitas bar. I will toss 4 – 6 Smithfield Boneless Pork Shoulder Seasoned Carnitas in my slow cookers the night before the game. Then I shred them up and put the meat back in the slow cooker for folks to use it for nachos, tacos, burritos or sandwiches.
I also use some of the meat to make a big batch of my Carnitas Queso Dip. No matter how much I make, there will NEVER be any dip left by the end of the night. Now, when I know I am having a few families over for game day, I pull out my large slow cooker. I make a huge pot of dip and give folks a ladle to make serving all that yummy dip super easy.
You don’t need a lot of ingredients for my recipe and it’s crazy simple to make. If you are just making this recipe for your family, you might want to use two thirds of the meat for Carnitas Tacos and the other third for your Carnitas Queso Dip. If you are entertaining, you can easily adjust to double, triple or quadruple the recipe. Yes, I have actually quadrupled this recipe before…with NO LEFTOVERS!
- Smithfield Boneless Pork Shoulder Seasoned Carnitas
- 1 pound White American Cheese (shredded)
- 3/4 cup water, divided (1/2 cup for meat and 1/4 cup for cheese dip)
- 1/2 cup milk
- 2 – 3 TBSP chopped pickled jalapeño (depending on heat desired)
- 1 1/2 oz pickled jalapeño juice
- chopped cilantro and chopped red onion, if desired
- Add the Smithfield Boneless Pork Shoulder Seasoned Carnitas and 1/2 cup of water to the slow cooker and cook on low for 6 – 8 hours.
- Once cooked, remove the meat and shred. Set aside about 1 cup of shredded meat for the dip and enjoy the rest in a taco, burrito or my [url href=”https://www.old.iheartpublix.com/2019/09/caldo-de-carnitas-carnitas-soup-fabulous-recipe-for-the-smithfield-coupon/”]Caldo de Carnitas (Carnitas Soup)[/url]
- Add the remaining ingredients to a microwavable-safe bowl and stir together.
- Microwave for a total of 4 – 5 minutes (stirring after each minute)
- Remove from microwave and use a whisk to stir to desired consistency.
- Stir in the shredded meat and serve topped with cilantro and chopped red onion.
- Serve with chips and enjoy!
