So I had a chance to try the Oven-Roasted Root Vegetables recipe and I am so thrilled that I did. Guys, it was absolutely amazing. My entire family loved the veggies…well most of them anyway. My boys did NOT care for the beets but they gobbled up those sweet potatoes, carrots and the kale lickity split. That big sheet pan was completely empty by the end of our meal.
I will be honest, I was a little nervous about this one. When I added the Hellmann’s Mayo and mixed it all together the beets made everything look pink and not so appetizing. AND, the ten cloves of garlic seemed like a huge amount to put with the veggies…but in the end everything turned out amazing and this baby will be added to my meal rotation for sure.
It was crazy simple but packed with such great flavor.
- 1/2 cup Hellmann’s® Mayonnaise Dressing with Olive Oil
- 2 lbs. assorted root vegetables (carrots, parsnips, beets, onions and/or sweet potatoes), peeled and cut into wedges
- 10 cloves garlic, finely chopped
- 1 Tbsp. fresh rosemary leaves
- 1/4 tsp. coarsely ground black pepper
- 3 cups chopped baby kale leaves
- Preheat oven to 425°.
- Combine all ingredients in large bowl until vegetables are well-coated.
- Spread vegetables in large shallow roasting pan or jelly-roll pan in single layer. Roast, stirring occasionally, 30 minutes or until vegetables are tender and golden. Sprinkle, if desired, with chopped fresh parsley.

I have a question about the recipe. Was the kale part of your 2lb of root vegetables? Or was that in addition, and accidentally left off of the ingredients?
