Head into Publix and pick up delicious cheese the next time you shop and try one (or all three) of my tasty Mini Cheese Balls. They are a delicious snack or appetizer that your family and friends are sure to love!
- 8 oz Tillamook Sharp Cheddar Cheese, grated
- 8 oz cream cheese, softened
- 2 tablespoons ranch dressing mix
- 6 slices of bacon, cooked crisp and crumbled
- 1 cup pecans, chopped
- 4 green onions, chopped
- 2 tablespoons fresh parsley, chopped
- In a small bowl, combine the bacon, pecans, green onion and parsley.
- Reserve 1/4 of the mixture and set aside.
- Mix the rest of the mixture with the cream cheese, cheddar cheese and ranch dressing mix.
- Stir until combined and refrigerate for 20 – 30 minutes.
- Shape the mixture into 1″ balls and then roll in the reserved bacon mixture, pressing to coat the ball.
- Refrigerate until ready to serve.
- Serve with crackers.
- 8 oz Tillamook Medium Cheddar Cheese, grated
- 6 oz chive and onion cream cheese, softened
- 1 cup pecans, chopped
- 1/4 cup chives, chopped
- 1/4 teaspoon garlic
- In a small bowl, combine the pecans and chives.
- Reserve 1/4 of the mixture and set aside.
- Mix the rest of the mixture with the cream cheese, cheddar cheese and garlic.
- Stir until combined and refrigerate for 20 – 30 minutes.
- Shape the mixture into 1″ balls and then roll in the reserved nut/chive mixture, pressing to coat the ball.
- Refrigerate until ready to serve.
- Serve with crackers.
- 8 oz Tillamook Colby Jack Cheese, grated
- 8 oz garden vegetable cream cheese, softened
- 1/4 cup dried cherries, finely chopped
- 1 cup walnuts, chopped
- freshly ground black pepper
- In a small bowl, combine the cherries and walnuts.
- Reserve 1/4 of the mixture and set aside.
- Mix the rest of the mixture with the cream cheese, Colby Jack cheese and black pepper to taste.
- Stir until combined and refrigerate for 20 – 30 minutes.
- Shape the mixture into 1″ balls and then roll in the reserved nut/cherry mixture, pressing to coat the ball.
- Refrigerate until ready to serve.
- Serve with crackers.
