With lacrosse starting up this week, I will have to rely on meals that I can make ahead of time. Because of practice/games, I might not get home until after 7pm some nights. The last thing I want to do is then spend another hour in the kitchen. My guys get home and are hungry so I need to have dinner on the table fast. This Harvest Chicken Salad is a super easy option that can be made the day before so that it can just be pulled from the fridge and served up. It’s definitely a weeknight winner!

- 1 package Toufayan Smart Pockets
- 1 pound boneless, skinless chicken breast (approx. 2 breasts)
- 2 teaspoons olive oil
- salt & pepper
- 1/2 cup mayo
- 1 tablespoon lemon juice
- 1 tablespoon dijon mustard
- 2 Tbsp. finely chopped red onion
- 1 granny smith apple, cored and diced
- 1/4 cup dried cranberries or cherries
- 1 cup grapes, sliced
- 3 green onions, chopped
- 1 tablespoon toasted walnuts or pecans
- Preheat oven to 350º F.
- Cut each chicken breast in half lengthwise to reduce cook time.
- Rub the olive oil over the chicken and sprinkle with salt and pepper.
- Place on a shallow baking sheet and roast the chicken for approximately 15 – 20 minutes, until cooked through.
- Cool slightly and then cube the chicken into bite size pieces.
- Add the cubed chicken to a large bowl with the onions, apple, cranberries, grapes and nuts.
- In a small bowl, whisk together the mayo, dijon mustard and lemon juice until combined.
- Gently fold the mayo mixture into the chicken mixture to evenly coat all ingredients.
- Taste and season with salt and pepper as needed.
- Refrigerate until ready to serve.
- To serve, fill each Toufayan Smart Pocket with the prepared chicken salad.
