Things are crazy right now. Kids are home from school, schedules are chaotic, various businesses are closed and the suggestion is that we all practice social distancing. With all the chaos we still have some basic things that have to happen every day. Keeping our families fed is obviously an item that’s very high on that list.
With all the uncertainty that we are dealing with, saving time and money is more important than ever. I am going to do my best to try to share meal ideas and menu suggestions based on the current deals at Publix. I am going to try to focus on easy meals, meals using pantry staples, recipes that pair with sales and recipes that can be used for multiple meals.

Spaghetti is one of the easiest and most economic meal options out there. Obviously you can just boil up some pasta and serve with a sauce for a meal in a pinch. When I need a meal that I can prep ahead of time and bake when I need it, I whip up a batch of my Creamy Baked Spaghetti & Meatballs.
This is a great meal for the current and upcoming sales at Publix.

- 8 oz spaghetti (or your favorite pasta)
- 2 cups pasta sauce
- 12 oz frozen meatballs (about 24 mini meatballs)
- 4 oz cream cheese, softened
- 1 cup mozzarella cheese
- Preheat oven to 375º F.
- Cook the spaghetti according to directions – just until al dente.
- In a large bowl, mix together the pasta sauce and cream cheese.
- Add the cooked spaghetti and toss to combine.
- Pour the mixture into a oven safe 12″ skillet or 9″ x 12″ casserole dish and arrange the meatballs over the spaghetti mixture.
- Sprinkle with the mozzarella cheese and bake for 25 minutes.
Do you defrost the meatballs or add in frozen?
Frozen is fine…they bake long enough to heat fully.
BUT–you can always defrost and put them in if you want. I typically make mine ahead of time and they will defrost a bit in the fridge 😉
