At my house everyone likes something slightly different. They all start with the basics of beans and cheese but then we add all kinds of goodies. My husband likes to add jalapeños, red onion and cilantro inside his quesadilla and then top it with sour cream and salsa. I like mine with just beans and cheese inside BUT topped with cilantro, onions, black olives, tomatoes and guacamole. Jake adds black olives and lettuce to his and Jeb will only eat his with beans and cheese but…cooked extra crispy.
Even with all those modifications, I can have dinner on the table in under 15 minutes. In fact, we enjoyed them just minutes ago and I have already cooked, cleaned and had time to type up this post.

How you prepare the quesadilla is really a matter of preference. For this recipe, I prefer the fill and fold method. I spread beans and sprinkle cheese over half of one tortilla and then fold and cook. BUT…if you prefer, you can sandwich the beans and cheese between two tortillas and heat until the beans and cheese are heated through. Just be aware that you’ll need to flip that big quesadilla to crisp both tortillas and things might get a bit messy. It will taste great either way!
Grab a few ingredients and whip up a tasty meal in a flash!
- 16 oz can refried beans
- 8 oz shredded cheddar or colby jack cheese
- 8 flour tortillas
- Olive oil
- salsa, guacamole, sour cream or any other tasty toppings
- Spread the beans over half of each tortilla and top with cheese then fold to create a half moon.
- Heat a large skillet over medium low heat and lightly coat with olive oil.
- Place prepared tortillas in the skillet in batches and cook until the tortilla is golden brown, turning once. Make sure to cook on a low heat to ensure the beans are heated through and the cheese is melted.
- Serve with salsa, guacamole, sour cream or any other tasty toppings.
